I love making Peach dump cake, Peach coffee cake, or peach jam. Another family favorite is this peach crumble. If you're like me and you pick it off coffee cake, this recipe is for you. Unlike a cobbler which uses a biscuit-like topping ,or a crisp which has an oat base, this uses a streusel base. Serve with homemade whipped cream or ice cream for the perfect finish for any meal.

  • Peaches: We like yellow peaches here as they have a bold slightly acidic flavor and hold their shape even when baked. Pick peaches that have a slight give when pressed but that are not overly soft.
    • Grab freestone peaches if you can find them, it's a lot easier to pull the slices away from the pit.
  • Flour: Spoon your flour into a cup and then level it off with a knife. Avoid scooping your cup into the flour, as you'll get too much which can make the topping dry or crumbly.
  • Lemon: Use fresh lemon juice for the best flavor. Roll it on the counter before juicing to help burst the juice sacs and pop in the microwave for 20-30 seconds to make it easier to squeeze.
  • Butter: I like unsalted butter is recommended so I can control the salt level. If you only have salted butter just omit the extra salt form the topping.

It can be too sweet from the syrup or too mushy after cooking.

  1. Peel and slice peaches. Toss with sugar, cornstarch, cinnamon, and salt. Layer in pan.
  2. Combine all dry crumble ingredients.
  3. Cut in butter until the mixture resembles coarse crumbs.
  4. Sprinkle over peaches and bake until golden brown.

  1. Peaches Not Ripe? Place them in a paper bag for 1-2 days. The ethylene gas released will help them ripen quickly.
  2. Size Matters: Slice pieces into even pieces so they cook evenly. If not, you may end up with some mushy and some hard pieces.
  3. Help The Topping Crisp Up: Make sure you use cold butter. As it melts, it creates pockets, leading to a crispy, crunchy topping.

Do I Have To Peel My Peaches?

I prefer to peel my peaches, and the skin can be tough and chewy. However, they are perfectly edible if you prefer a more rustic texture.

Can I Use Frozen Peaches?

If peaches are not in season frozen is the next best thing. Don't thaw them first, and add an extra teaspoon or two of cornstarch to account for the extra moisture.

Can I Use Canned Peaches?

I don't suggest using canned peaches. The syrup can make them overly sweet and the canning process can make them too soft/mushy.

Ingredients

For the Peaches

  • 4-6 Large Fresh Peaches Or 3-4 Cups Frozen Peaches
  • Cup Brown Sugar
  • ½ Tablespoon Cornstarch
  • 3-4 Teaspoons Lemon Juice Freshly Squeezed
  • ¼ Teaspoon Salt
  • 2 Teaspoons Vanilla Extract

For the Topping

  • 1 Cup All Purpose Flour Measured Correctly: Spooned and Leveled
  • ½ Cup White Sugar
  • ½ Cup Brown Sugar Packed
  • ¼ Teaspoon Salt
  • ½ Teaspoon Ground Cinnamon
  • ½ Cup Butter Cold

Instructions

  • Preheat oven to 375 degrees F. Butter an 8x8 or 9x9 inch baking pan.
  • Peel and slice peaches. In a medium bowl toss peaches, brown sugar, cornstarch, lemon juice, salt, and vanilla.
  • In a medium bowl, stir flour, white sugar, brown sugar, salt and cinnamon together.
  • Cut in butter using a pastry cutter or 2 forks until mixture resembles coarse crumbs.
  • Evenly sprinkle over peaches. Bake for 45-50 minutes or until filling is bubbling and the top is golden brown. Enjoy!

Notes

The easiest way to peel peaches is to score an x onto the bottom, boil for 30-60 seconds, and the place into an ice bath. It will slide right off!
Cool uncovered before storing in the fridge.

    I used more peaches and the flour was way too much for the recipe I ended up with a lot of leftover. I also warmed up the peaches first a bit to make sure they fit in the pan. Overall great simple recipe.

    Hi! I made this for my Ladies Breakfast this morning and they couldn't get enough; plus it was the first time I baked anything like this in my life and I'm just about 77. LOL! Thank you! So...so...good!!! I just changed it by putting a little Vanilla in it as I warmed the fruit up first before it even hit the pan; Only took 20 min.

    This is the best crumble recipe I ever used. It was so nice warm and the crumble bit on top was amazing
