If you know me you know I love sweets breakfasts whether it be pancakes or donuts.  This is on a whole other level. It is the best Cinnamon Coffee Cake recipe I’ve ever tried. It is easy enough to make for a simple weekend breakfast, but delicious enough for holidays like Christmas or Easter.

It features a perfectly tender moist cake with a delicious cinnamon swirl. And just like your favorite store-bought treat it features a mile high crumb toppings. Let’s be honest the crumbs are the best part. I may or may not shovel them in my mouth while making this. The cinnamon streusel coffee cake cake can be enjoyed in the morning with your cup of coffee or for dessert.

How To Make Cinnamon Coffee Cake

  1. Prep Work: Preheat oven and grease pan.
  2. Cream Butter: Cream butter and sugar. Stir in eggs, baking powder, salt, and vanilla.
  3. Alternate adding flour and milk. Mix until just combined.
  4. Make the Cinnamon Swirl: Combine butter, flour, sugar, and cinnamon until crumbs forum.
  5. Make the Topping: Combine butter, sugar, flour, and cinnamon until the mixture resembles coarse crumbs.
  6.  Assemble: Spread half of the batter into pan. Pour in the filling, and then remaining cake batter. Top with crumble mixture.
  7. Bake: Bake for 45-50 minutes. Enjoy!

How Do I Store It?

I suggest storing this cake at room temperature. Make sure the cake is covered well. You can use an airtight container like a cake stand or Tupper ware container.  A plate covered tightly with foil or plastic wrap will work well too.

Can You Freeze It?

This easy cinnamon coffee cake freezes beautifully. It will stay fresh in the freezer for up to 3 months’ time. You can freeze the whole thing or individual slices. Be sure to wrap the cake with plastic wrap, and then place it inside a freezer bag. Pull out and thaw individual slices when you’re craving a breakfast treat.

How Long Will It Last?

This cinnamon roll coffee cake will last about a week when it is stored properly. Mine has never last that long though! You can store the cake in the refrigerator to last a few days longer,or store it in the freezer so you can have coffee cake whenever the craving hits.

Does It Contain Coffee?

This cake does not contain coffee. Coffee cake is called coffee cake because it is a cake that is often served alongside a good cup of coffee.

Cinnamon Streusel Coffee Cake Tips

  1. Do not over mix: Mix your ingredients until the flour is just combined. Over-mixing can lead to a tough tense cinnamon swirl cake.
  2. For the perfect cinnamon swirl drop streusel ingredients using a teaspoon from your silverware drawer. Then swirl with a butter knife.
  3. To tell if the cake is done insert a toothpick in the center. If it comes out clean or with just a few crumbs, it is done. If it comes out with batter, continue baking in 2-3 increments. Do not over bake as that will lead to a dry cake.
  4. Make sure you use softened NOT melted butter. This is especially important for the crumb topping, as melted butter will not give you the same result. If you need to soften butter quickly I suggest cutting into smaller cubes or microwaving for 10-20 seconds.
  5.  I think this coffee cake is perfect as is, but you can also add a simple glaze on top if you’d like.

Variations

  1. I used cinnamon as the main spice here. A pinch of nutmeg, cardamom, or even apple pie spice would be wonderful as well.
  2. Craving more crunch? Add some roughly chopped pecans or walnuts on top.
  3. Fruit can also be added after pouring in half the batter. Blueberries, apples, or even raspberry would taste amazing!

Ingredients

For the Coffee Cake

  • 1/2 Cup Butter Softened
  • 3/4 Cup White Sugar
  • 2 Teaspoons Vanilla Extract
  • 1 Egg
  • 2 Cups All Purpose Flour
  • 2 Teaspoons Baking Powder
  • 1 Pinch Salt
  • 3/4 Cup Whole Milk

For the Cinnamon Swirl

  • 3 Tablespoons Butter Softened
  • 1 Tablespoon Cinnamon
  • 1/2 Cup All Purpose Flour
  • 1/2 Cup Brown Sugar Packed

For the Crumb Topping

  • 5 Tablespoons Butter
  • 3/4 Cup All Purpose Flour
  • 1/2 Cup Brown Sugar Packed
  • 1 Tablespoon Cinnamon

Instructions

For the Cake

  • Preheat oven to 350 degrees F. Spray a 9x9 pan with non stick baking spray.
  • In a large bowl, cream butter and white sugar. Stir in vanilla, egg, baking powder, and salt.
  • Alternate stirring in flour and milk until just combined. Do not over mix.
  • Pour half of batter into prepared pan.

For the Cinnamon Swirl

  • In a small bowl, combine the butter, flour, brown sugar, and cinnamon.
  • Pour into the batter in pan, and swirl with a knife. Pour remaining batter on top.

For the Crumb Topping

  • In the same small bowl using 2 forks, butter, flour, brown sugar, and cinnamon until mixture resembles coarse crumbs.
  • Sprinkle topping on top of batter, and press in lightly.
  • Bake for 40-45 minutes, or until a tooth pick inserted in the center comes out clean.
