The Slow Cooker Pot Pie That Finally Gets The Crust Right

I love low effort chicken dinners like potato chip chicken, chicken bacon ranch casserole, baked jerk chicken thighs, Marry Me Chicken, and Instant Pot Crack Chicken. My new favorite is this crock pot chicken pot pie. It is just classic comfort food. The chicken is juicy not stringy, the veggie aren't overcooked into oblivion, and the topping is perfectly crispy. We like using crescent rolls, but you could also use biscuits, puff pastry, or even a premade pie crust. Serve with Instant Pot Mashed potatoes.

  1. We Use Thighs Not Breasts: Low and low turns their collagen into silky smooth gelatin. This gives them a moist melt in your mouth texture and also add body to the filling.
  2. SO Much Flavor: Worcestershire sauce, tomato paste, and Better Than Bouillon add pops of umami and acid. Searing our chicken also makes a huge difference to the final flavor of the dish.
  3. We Add Our Veggies Later: This prevents them from being mushy and overcooked.
  4. Crust Included: This adds great textural contrast!

Ingredients Notes and Shopping Tips

  • Chicken Thighs: These are juicy, full of flavor, and usually cheap. Grab one that are boneless and skinless so they're easy to work with and not overly fatty.
  • Veggies: We like the flavor of fire roasted corn. You could also buy peas/carrots separately if you prefer a different ratio than the standard steamer bag offers.
  • Heavy Cream: This adds a touch of richness. Do not substitute milk or half and half as it's more likely to curdle.
  • Better Than Bouillon: This makes the broth taste homemade without any fuss. If you can't find it you can also use an equal amount of chicken broth.
  • Tomato Paste: Don't leave this out. It adds great flavor without making it taste like tomato sauce. I like buy it in the tube so it's easier to store for future recipes.
  • Crescent Dough Sheets: These are essentially crescent roll dough without the score marks that show you where to separate. Look for them near the refrigerated biscuits.
    • If you can only find the crescent rolls, pinch the seams together before cutting into strips.
Can I Use Chicken Breasts Instead?

If you're not a fan of dark meat, you can also use chicken breasts; just be aware that the flavor will be different.

What If My Filling Is Too Thin?

Add more of the cornstarch slurry until you reach your desired consistency. You can also use instant mashed potato flakes to thicken things in a pinch.

Can I Use Frozen Chicken?

NO! Never use frozen chicken in a slow cooker. It heats up gradually and the meat will sit in the danger zone (40-140) degrees too long for food safety. If your chicken is frozen thaw it overnight in the fridge first.

  1. Crockpot Liner: For easy cleanup, use a crockpot liner. Look for them near the tin foil and plastic wrap at your grocery store. If you don't have one hand, spray your slow cooker with nonstick cooking spray.
  2. Add the heavy cream last or it may curdle. We do this in our crock pot beef and noodles too.
  3. No Peeking: Avoid lifting the lid. Doing so will lower the temperature of the slow cooker and may require a longer cooking time.

Ingredients

  • 1 Tablespoon Vegetable Oil
  • Pounds Chicken Thighs Boneless/Skinless
  • 1 Onion Diced
  • 3 Cloves Garlic Minced
  • 2 Cups Fire Roasted Frozen Corn
  • 2 Cup Frozen Peas and Carrots
  • 1 Teaspoon Thyme Dried
  • 2 Teaspoons Worcestershire Sauce
  • 2 Tablespoons Tomato Paste
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • Salt & Pepper To Taste
  • 2 Cups Hot Water + 2 Teaspoons Better Than Bouillon Chicken Base Or 2 Cups of Chicken Broth
  • ¼ Cup Heavy Cream
  • 2 Tablespoons Corn Starch Mixed With 2 Tablespoons Water
  • 1 Crescent Dough Sheet 8 Ounce Can

Instructions

  • In a large skillet heat oil. Sear chicken for 3-4 minutes per side until well browned. Deglaze with ~¼ cup of the bouillon mixture scraping up any brown bits.
  • Place chicken and liquid from the pan in slow cooker. Top with onion and garlic.
  • Sprinkle with thyme, garlic powder, onion powder, Worcestershire sauce, tomato paste, and salt/pepper. Stir in rest of bouillon mixture.
  • Cook for 3-4 hours on high, or 6-8 hours on low.
  • Cut chicken into bite size pieces or shred. Stir in cream, frozen peas/carrots, frozen corn, and cornstarch/water mixture.
  • Preheat oven to 375 degrees F. Cook on high for 30-60 minutes until thickened.
  • Cut crescent dough into ~½ inch strips. Lay one over the other in a lattice pattern. Bake at 375 degrees in the oven for 11-13 minutes. Lay on top just before serving.

    This was delicious! I added a homeade vegetable broth, onion powder, cauliflower, extra celery, parsley, and parmesan. My autistic son ate pot pie for the first time ever! I will definitely add this to rotation. Next time I will add carrots, pearl onions, and salt.
