My Marry Me Tortellini features juicy chicken, crispy bacon, and cheesy pasta in a sun dried tomato cream sauce. This easy recipe is perfect with garlic bread to sop up every last drop of the sauce.

We're big fans of Marry Me Chicken around here. I've previously shared crock pot Marry Me Chicken and marry me chicken meatballs. However, this marry me tortellini might be the best of them all! You get cheese filled pasta and crunchy bacon in the classic sauce. It's on the table in less than 45 minutes but looks and tastes fancy!

  1. We Cook Our Chicken In Bacon Grease: This sears the chicken in something flavorful rather than plain oil. This gives the chicken and the rest of the dish a meaty smoky flavor.
  2. We Use the Fond In Our Pan Sauce: The browned bits from cooking the chicken give or sauce a deep, rich flavor.

  • Parmesan: Buy a wedge of parmesan and grate it yourself. It will taste so much better and melt more smoothly as well.
  • Chicken Broth: Use low sodium if you have it. If you don't want to open a can for such a small amount you can also use a half teaspoon of Better Than Bouillon Base dissolved in water.
    • Broth also freezes well in ice cube trays. 4 cubes= around a half cup.
  • Sun-Dried Tomatoes: Choose ones packed in oil. They have more flavor and don't have to be rehydrated in water.
  • Heavy Cream: Heavy cream is less likely to break than half and half.
  • Spinach: Use fresh not frozen. Frozen contains too much liquid and it is hard to squeeze it all out.

  1. Freeze the Chicken: Freezing it for 15-20 minutes will make it easier to slice.
  2. Sear Don't Steam Your Chicken: Make sure the grease is still hot before adding the chicken. Work in batches if you need to so the pan doesn't get too crowded.
  3. Undercook the Pasta: Undercook the tortellini by a minute or 2 as it will continue to cook in the sauce.
Can I Use Frozen Tortellini?

We like the softer texture and faster cooking time of fresh but frozen works too.

Can I Use Rotisserie Chicken?

Yes! Stir in 2-3 cups of shredded or cubed chicken in the last few minutes of cooking.

Ingredients

  • 2 Chicken Breasts Cubed
  • 4 Slices Bacon Not Thick Cut
  • Salt and Pepper To Taste
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Paprika
  • 3 Cloves Garlic minced
  • 1 Tablespoon Tomato Paste
  • ½ Cup Sun-Dried Tomatoes Packed in Oil Roughly Chopped
  • 1 Teaspoon Italian Seasoning
  • 1 Cup Heavy Cream
  • ½ Cup Parmesan Cheese Freshly Grated
  • ½ Cup Chicken Broth Low Sodium
  • ½ Teaspoon Red Pepper Flakes
  • 2 Cups Spinach
  • 10 Ounces Cheese Tortellini

Instructions

  • Cook tortellini according to package instructions.
  • In a large skillet over medium heat, cook the bacon until crispy.
  • Reserve 1–2 tablespoons of grease. Season chicken with salt, pepper, garlic powder, and paprika. Cook over medium heat until cooked through around 5-7 minutes.
  • In the same skillet, add garlic, tomato paste, Italian seasoning, and sun dried tomatoes. Cook over low heat for 30-60 seconds.
  • Pour in chicken broth scraping up any browned bits from the bottom of the pan. Stir in heavy cream. Simmer for 3-4 minutes.
  • Stir in parmesan cheese and add spinach. Cook for 1-2 minutes until cheese is melted and spinach is wilted.
  • Add cooked chicken, bacon, and cook tortellini the pan and toss until coated.

Notes

Freeze chicken for 15-20 minutes to make it easier to slice. 
Undercook the tortellini slightly as it will finish in the sauce.
Freeze leftover broth in an ice cube tray. 4 cubes= a half cup
