Instructions
Cook tortellini according to package instructions.
In a large skillet over medium heat, cook the bacon until crispy.
Reserve 1–2 tablespoons of grease. Season chicken with salt, pepper, garlic powder, and paprika. Cook over medium heat until cooked through around 5-7 minutes.
In the same skillet, add garlic, tomato paste, Italian seasoning, and sun dried tomatoes. Cook over low heat for 30-60 seconds.
Pour in chicken broth scraping up any browned bits from the bottom of the pan. Stir in heavy cream. Simmer for 3-4 minutes.
Stir in parmesan cheese and add spinach. Cook for 1-2 minutes until cheese is melted and spinach is wilted.
Add cooked chicken, bacon, and cook tortellini the pan and toss until coated.
Notes
Freeze chicken for 15-20 minutes to make it easier to slice. Undercook the tortellini slightly as it will finish in the sauce.Freeze leftover broth in an ice cube tray. 4 cubes= a half cup
