I love casseroles so much my family calls me the casserole queen! I've previously shared fun casserole like Cheeseburger Tater Tot Casserole, Stuffed Pepper Casserole, Doritos Casserole. Another favorite is this cheesy chicken jalapeno popper casserole. It takes everything you love about the creamy and spicy appetizer and turns in into an easy dinner. It's also great for game day! Bonus: It's naturally keto friendly!

Ingredient Notes And Shopping Tips

  • Cream Cheese: Use full fat block style cream cheese. The whipped kind is easier to spread but it contains too much air and won't behave the same in this dish.
    • Be sure it is fully softened to make it easy to mix and spread. Around 30-60 minutes on the counter is perfect. Short on time? Dunk the sealed foil back in a bowl of warm water for a few minutes.
  • Cheese: Avoid pre-shredded cheese which is coated in ingredients like cellulose or potato starch. This helps prevent it from sticking together in the packaging but can lead to a greasy or grainy melt. Shred your own cheese for the best results.
  • Jalapenos: Look for smooth shiny peppers. Milder peppers are dark green while spicier peppers feature white stretch marks indicate it will be spicier!
    • Remove the seeds and ribs for less heat. You could also use drained pickled jalapenos for a milder flavor.
    • Wear gloves when chopping if you're sensitive to heat and always avoid touching your face!
  • Chicken: I like using rotisserie chicken because its cheap and so easy. You could use leftover grilled chicken or even canned chicken if desired.
  • Bacon: I like thick cut bacon. It stays crispy and doesn't get lost in this casserole.

Ingredients

  • 4 Cups Rotisserie Chicken
  • 8 Ounces Cream Cheese Softened
  • ½ Teaspoon Garlic Powder
  • ½ Teapoon Onion Powder
  • ½ Teaspoon Seasoning Salt
  • ¼ Teaspoon Black Pepper
  • 3 Jalapeno Peppers Diced
  • 1 Cup Sharp Cheddar Cheese Shredded
  • 8 Slices Bacon Cooked Crisp and Crumbled

Instructions

  • Preheat oven to 375 degrees. Spray 9x13 baking dish with nonstick cooking spray.
  • Place chicken into baking dish.
  • In a small bowl, mix cream cheese, onion powder, garlic powder, black pepper, and seasoned salt.
  • Spread chicken with cream cheese. Top with peppers, cheese, and bacon.
  • Bake for 20 minutes. Enjoy!
