I always have ground beef in the freezer. Some of my favorite ways to use it are stuffed pepper casserole, cheese shell tacos, and of course hamburgers. - Ground Beef: I used 80/20 for a super juicy burger with just enough fat.

- Canned Corn: Drain well so that it doesn't make the tortilla soggy. You can also use cooked fresh corn kernels or cooked frozen corn if desired.
- Jalapeño: Remove the seeds and membranes for milder flavor or leave it in if you like more heat. You could also use pickled jalapenos or diced green chiles for milder heat.
- Tomato: I like using Beefsteak or Roma tomatoes as they hold their shape well.
- Avocado: I like Haas avocados for slicing as they're creamy but still hold their shape. It should give slightly when pressed but not be overly soft.
- Ranch: You can also use store-bought Salsa ranch or as meat man prefers dill pickle ranch!

- Add Salt at the Right Time: Salt just before cooking. Adding salt too early can draw moisture from the meat and lead to a gummy texture.
- Handle as Little As Possible: Overmixing can make the patties tough and squeeze out moisture.
- Always Dimple Your Patties: This prevents the center from puffing up and helps them cook evenly.
- Hands Off the Spatula: Avoid flattening the patties or those delicious juices can run out.
- Account For Carry Over Cooking: Pull 5 degrees before your desired doneness. They'll continue cooking from the residual heat and won't come out dry or overcooked.

Ingredients
For The Burger Patty
- 1 Pound Ground Beef I used 80/20
- ¼ Medium Sweet Onion Finely Diced
- 2 Garlic Cloves Minced
- ½ Teaspoon Cumin
- ¼ Teaspoon Chipotle Chili Powder
- Salt and Pepper To Taste
For The Quesadilla Burger
- 4 Flour Tortillas
- 4 Slices Cheddar Cheese
- ¼ Cup Canned Corn Drained
- 1 Jalapeno Pepper Seeded and Thinly Sliced
- 1 Tomato Sliced
- ½ Avocado Sliced
For the Chipotle Ranch
- 2 Tablespoons Ranch Dressing
- ½ Teaspoon Chipotle Chili Powder
- Pinch of Paprika
- Salt & Pepper To Taste
Instructions
For The Burger Patty
- In a medium bowl, combine ground beef, onion, garlic, cumin, and chipotle chili powder. Form into even patties and place a dimple in the center.
- Grease skillet ,and heat over medium high heat. Season with salt and pepper just before cooking.
- Cook until burgers are your desired level of doneness. Drain grease.
- Add four flour tortillas to the skillet, and top with cheese. Cook over medium high heat until tortillas are crispy and cheese is melted.
- Add corn and burger to 2 of the tortillas. Top with tomato, avocado, and jalapeno peppers.
- In a small bowl combine ranch dressing, chili powder, paprika, and salt/pepper. Drizzle over burger. Top with remaining tortillas.
