I always have ground beef in the freezer. Some of my favorite ways to use it are stuffed pepper casserole, cheese shell tacos, and of course hamburgers. If you’ve ever debated tacos vs. burgers with your spouse this quesadilla burger recipe for end that argument: Both! It's inspired by the popular Applebee's dish but made our own with delish toppings. Serve with chips and queso or roasted street corn on the side.

Why This Recipe Works: A Sprinkle of Food Science

  • 80/20 Beef: Fat keeps the patties juicy and flavorful without being overly greasy.
  • Cast Iron Pan: A super hot pan gives the burgers a nice crust and easily crisps up the tortillas.
  • Dimpled Patty: This ensures the patty cooks evenly without a raw center or overcooked edges.

Ingredient Notes and Shopping Tips

ingredients including ground beef, tortillas, cheese, jalapenos, tomatoes, avocado, ranch dressing, cumin, and chili powder.
  • Ground Beef: I used 80/20 for a super juicy burger with just enough fat.
  • Flour Tortillas: Use burrito size tortillas to give you enough room for all your filling.
  • Canned Corn: Drain well so that it doesn't make the tortilla soggy. You can also use cooked fresh corn kernels or cooked frozen corn if desired.
  • Jalapeño: Remove the seeds and membranes for milder flavor or leave it in if you like more heat. You could also use pickled jalapenos or diced green chiles for milder heat.
  • Tomato: I like using Beefsteak or Roma tomatoes as they hold their shape well.
  • Avocado: I like Haas avocados for slicing as they're creamy but still hold their shape. It should give slightly when pressed but not be overly soft.
  • Ranch: You can also use store-bought Salsa ranch or as meat man prefers dill pickle ranch!

Krystle's Tips: Steal My Culinary School Secrets

  1. Keep the Meat Cold: This helps prevent your patties from falling apart.
  2. Add Salt at the Right Time: Salt just before cooking. Adding salt too early can draw moisture from the meat and lead to a gummy texture.
  3. Handle as Little As Possible: Overmixing can make the patties tough and squeeze out moisture.
  4. Always Dimple Your Patties: This prevents the center from puffing up and helps them cook evenly.
  5. Hands Off the Spatula: Avoid flattening the patties or those delicious juices can run out.
  6. Account For Carry Over Cooking: Pull 5 degrees before your desired doneness. They'll continue cooking from the residual heat and won't come out dry or overcooked.
