Cherry Pie Bars With Shortbread Crust
My cherry pie bars have a buttery shortbread crust that doubles as the topping. This foolproof recipe doesn't require any rolling and is ready in under 40 minutes!

Bars are so much easier to make than pie. Some of ours favorites are pumpkin pie bars, Strawberry Shortcake Bars, and of course these cherry pie bars. They're easy, forgiving, ad almost impossible to make up. Cherry pie filling tastes amazing but feel free to switch up the flavor. They make a great treat for Valentine's Day, Christmas, or just because!
Ingredient Notes and Shopping Tips

- Butter: Butter should be softened but not melted. I like to cube mine and leave it at room temperature for about 30 minutes. You should be able to make an indent with your finger with gentle pressure.
- Eggs: Bring to room temperature to help everything come together smoothly. Short on time? Place in a glass of warm water for 5-10 minutes.
- Flour: Measure flour by spooning in your measuring cup and leveling with a knife. Do not dip your cup into a canister of flour. You'll use too much which can lead to dry shortbread.
- Cherry Pie Filling: I like Target's store brand of pie filling. It has great flavor and tons of fruit. Bonne Maman is also excellent but only available at World Market where I live.

- Use a metal pan: It conducts heat more evenly so your pan heats up quickly and cools off quickly too. If you only have a glass pan you may need to bake them for a few more minutes.
- Don't Overmix: We don't want to overdevelop the gluten which can lead to tough dense bars. Mix until the flour streaks just disappear.
- Dividing Dough: I'm terrible at eyeballing and will use way too much dough on the bottom and not have enough left for the top. I've recently started using a food scale to divide the dough evenly by weight and it works perfectly.

Cherry Pie Bars With Pie Filling

Ingredients
For the Crust
- 1 Cup Butter Softened
- 1 ¾ Cup White Sugar
- ½ Teaspoon Salt
- 3 Eggs
- 1 ½ Teaspoon Vanilla
- 2 ½ Cups All Purpose Flour
- 21 oz Cherry Pie Filling
For the Glaze
- 1 Cup Powdered Sugar
- 1 Teaspoon Vanilla
- 1 Tablespoon Milk
Instructions
- Spray a 13x9 pan with non stick cooking spray. Preheat oven to 350 degrees F.
- Cream butter and sugar until light and fluffy. Stir in salt, and vanilla extract.
- Stir in eggs, one at a time. Gradually stir in flour a little at a time.
- Press ½ of dough into a thin layer in your prepared pan. Top with pie filling.
- Drop remaining batter over filling using a tablespoon.
- Bake for 28-30 minutes or until golden brown. Cool completely.
- Whisk together all glaze ingredients. Drizzle over cooled bars.

This is one of my husbands favorites. My recipe calls for all the batter to be poured into pan and then the pie filling to be placed in sections or 'squares' then baked. So much easier. Give it a try. Either way, the end result is delish.
