Every family has a taco night. For us it is usually Thursday night. Nothing gives me the energy and motivation to finish out the week like crunchy tacos, and melty cheese. This keto cheese taco shells recipe is Keto, Low Carb, and all that jazz. But, you know how we roll around here, yummy indulgent food. At the end of the day, it is a taco shell made out of cheese that is super tasty. And of course we’ll fill it with more cheese and maybe even queso!

How to Make Cheese Taco Shells
I know that buying taco shells is the easy way to go. In fact, they even sell cheese-flavored ones. But if you’re looking to up the flavor game of your tacos ,then you need to try making your own. Don’t worry, it’s really simple.
First, line your baking sheet with parchment paper or a silicon mat. Then, preheat your oven to 350 degrees. Place ¼ cup of cheese in piles about two inches apart on your prepared pan. Make sure the cheese is in one layer. You can press down on it lightly if you need to.
Bake them for five to seven minutes. The cheese should be brown on the edges. Now this part is important. Let them cool enough so you can handle them. It should take about two minutes or so. Once they are cool enough, peel the cheese off and hang it across a wooden spoon handle that is balanced on two cups. Let it cool. When you take it off the handle it will be in the shape of a taco shell.
Now that wasn’t too much trouble was it? I told you it would be worth it. Just wait until you taste it. You’ll never want to go back to store bought again. Next, cook your taco meat like you normally would. A lot of people use prepackaged taco seasoning but you can save money by using the spices that you already have in your pantry. I used onion powder, garlic powder, chili powder, cumin and salt. When your ground beef is done, fill your shell, and top it as you like.
Who Invented Tacos?
Honestly, no one really knows who invented tacos, or even when. There is strong evidence that shows they were invented in the south of Mexico ,and were often filled with fish. One of the first mentions of tacos in America was in 1905 when immigrants came from Mexico to work in the mines ,and on the railroads. They were often seen on food carts at that time too.
What to Put Into Tacos?
This question could have a million different answers, and I bet they’d all be delicious.
Meats: Our favorite is ground beef. Steak, chicken, or even pork carnitas would also be delicious.
Cheese: Cheese is always a must!
Vegetables: Tomatoes, Shredded Lettuce, Roasted Corn, Sweet Onion, Sliced Avocado, Jalapenos
Extras: Queso, Salsa, Pico, Guacamole, Cilantro, Squeeze of Lime Juice, Ranch
Vegetarian:Finally, you could make an all vegetarian taco using black or pinto beans.
Can you Use Other Kinds of Cheese ?
Cheese is one of my favorite things. Use whatever hard cheese you like for your cheese tacos. Other great options are Monterey Jack, Colby, or even pepper jack.
What Goes With Tacos?
At our house when we have taco night, tacos are the star. On the side we like serving refried beans, Mexican style rice, and of course nachos with queso.

Ingredients
For the Cheese Taco Shells
- 2 Cups Cheddar Cheese Shredded
For the Taco Ground Beef
- 1 Pound Lean Ground Beef
- 1 Tablespoon Chili Powder
- 2 Teaspoons Cumin
- 1 Teaspoon Onion Powder
- ½ Teaspoon Garlic Powder
- ¼ Teaspoon Salt
- ¼ Cup Water
To Serve
- Cheese
- Lettuce
- Tomatoes
- Salsa
- Sour Cream
- Guacamole
Instructions
- Preheat oven to 350 degrees F.
- Line a cookie sheet with parchment paper. Place ¼ cup of cheese 2 inches apart. Press into a circle.
- Bake for 5-7 minutes, or until the edges begin to turn brown.
- Cool for 2-3 minutes. Balance a wooden spoon on top of 2 cups. Hang cheese on wooden spoon handle. Cool completely before removing.
- Brown ground beef in a skillet until no longer pink. Stir in cumin, chili powder, onion powder, garlic powder, and salt. Pour in water, and cook 4-5 minutes or until evaporated.
- Fill taco shells with ground beef and your favorite toppings.
