Baked Buffalo Chicken Mac and Cheese
This baked buffalo chicken mac and cheese features spicy chicken, a creamy sauce, and plenty of melty cheese. This recipe combines 2 of my favorite comfort foods in 1 great dish that is sure to be the game day MVP. Ready in just over 30 minutes!

Ingredient Notes and Shopping Tips
- Elbow Macaroni: You can use other pastas too. Look for ones with ridges to hold all that amazing sauce. Rotini, cavatappi, or even penne would work well.
- Milk: Use whole milk for the best results. Lower fat milks are more likely to separate.
- Cheese: Shred your own cheese. The fillers in store bought can interfere with melting and make the final dish greasy or grainy.
- Buffalo Wing Sauce: Use your favorite brand. I like Frank's Red Hot Buffalo sauce. Be sure to buy the wing sauce and not the hot sauce or it'll be way too spicy. I did this once and it burned our eyes while it was cooking!! Buffalo Wild Wings is also good.
- Cooked Chicken: I used poached chicken. You can use leftover grilled chicken or even Rotisserie chicken too.

- Don’t Overcook Pasta: Cook macaroni 1–2 minutes under al dente. It will finish cooking in the oven and we don't want it to be overcooked and mushy.

Easy Buffalo Chicken Mac and Cheese

Ingredients
- 4 Cups Elbow Macaroni Cooked According To Package Directions
- 1 Cup Whole Milk
- 2 Cups Sharp Cheddar Cheese Shredded
- 1 Cup Mozzarella Cheese Shredded
- 1 ¼ Cups Buffalo Wing Sauce Divided
- 1 Cup Cooked Chicken Cubed
- 1 Cup Blue Cheese Crumbled
Instructions
- Preheat oven to 375 degrees F. Spray a 9x9 inch baking dish with non stick cooking spray.
- in a large saucepan heat milk. Add in sharp cheddar and mozzarella cheeses.Stir until melted.
- Stir in buffalo wing sauce.
- Pour in chicken and cooked macaroni. Evenly spread into prepared pan.
- Bake for 25-30 minutes or until bubbling and golden around the edges.
- Drizzle with remaining buffalo sauce, and top with blue cheese.
- Bake for another 5-10 minutes.
