Avocado Egg Rolls: Creamy avocado inside an ultra crispy shell. Tastes like deep fried guacamole!an egg roll filled with avocado being dipped into a creamy cilantro sauce.

I love crunchy appetizers like hush puppies, fried pickles, and of course egg rolls.  The crispy shell and various fillings make the perfect appetizer. One of my favorite varieties is avocado egg rolls.  I often get them when I go to the Cheesecake Factory.

I know Cheesecake Factory isn’t widely available to everyone, and it is so pricey! Here is my version of one of their best appetizers. (Also try my deep-fried Mac and cheese and spicy chipotle pasta that are similar to theirs).  This recipe will have your family ,or friends begging for just one more.

Make these for a party and they will be the first thing to disappear! People can’t get enough of them. Be ready to make them over and over.

How To Make Avocado Egg Rolls

Step One: The Sauce

Let’s start off by making the dipping sauce.  The Avocado Eggs Rolls @ Cheesecake Factory have a  tamarind dipping sauce which isn't something I can get at my local small town grocery store. Instead, I made a cilantro dipping sauce. It has cilantro, sour cream, jalapeno, mayo, garlic, salt, pepper and a little lime juice. I love simple recipes ,and you can’t get any easier than this. All you do is mix these ingredients together in a bowl and set it aside.

Next heat your oil in a dutch oven ,or in a deep skillet. Make sure to do it over medium high heat. You do not want your oil to be too hot. After that, mash your avocados in a bowl ,and add the remaining ingredients.

Now it’s time for the fun part!  Get your egg roll wrappers, placing one in front of you in the shape of a diamond. Making eggrolls is easy, don't be intimidated.  Anyone can do it! Place a little of the filling in the middle of the wrapper. Then bring the corner closest to you up ,and fold it over the filling. Fold the sides in like you’re making an envelope. Dip your finger in water and rub the edges of the wrapper before closing it up.  When you set it aside, put it seam side down so it will stay together.

Once you’ve finished rolling all of your egg rolls, you’re ready to start frying. Don’t try to put them all in at once or they won't get golden brown. Do a few at a time ,so your pan isn't crowded. Then, cook them until they are golden brown all over. This should take about two or three minutes total.  Then, put them on a paper towel to drain excess oil. Serve them with the sauce you made, or another of your choice.

Can You Bake Them?

This is a question that I often get asked about this egg roll recipe. The good news is, yes! You can totally bake them. Baking them does make them healthier as there is no oil. Just put them in the oven with an egg wash and bake them for about twenty minutes at 425 degrees. They will be almost as golden brown as if you had fried them.

Can You Freeze Them?

If you’re planning on making these for a party you may want to make them ahead of time. You can freeze these with no problem. Just be aware,they make take a little longer to cook if they are frozen. Also consider freezing a larger batch,  so you have some on hand. These are perfect for an easy addition to a weeknight meal, or a snack for your ravenous teens.

What Does a Ripe Avocado Look Like?

A lot of people will tell you that a dark avocado is a ripe avocado. While in most cases that is true, color can vary. The best way to tell if an avocado is ripe is to feel it ,and look at the color. If you can press into it , but it is not mushy odds are good that it is ripe.  I also like to check the stem. If it is green it is perfectly ripe, however if it is brown it may be over ripe. My grocery store also has them marked with little "ripe" stickers to help us out. When you bring them home, make sure to use them right away so they don’t get over ripe.

How Do You Properly Cut An Avocado?

Slice it vertically (long ways) until you feel the pit. Once it is opened ,take the pit out with your knife.

Then, scoop the flesh out of the skin by placing a spoon between the skin and the flesh. This works well for this recipe ,or guacamole. You can also slice it while still in the skin for recipes like taco soup or burgers.

 

Serve With 

These go great with Mexican meals ,or just other appetizers.  Some of my favorite pairings are deep Fried Mac and Cheese, or Honey Walnut Shrimp.  They also makes a great snack on their own. nomnomnom

Ingredients

For the Avocado Egg Rolls

  • 1-2 Cups Vegetable Oil
  • 3 Avocados Halved
  • 1 Roma Tomato Diced
  • ¼ Cup Sweet Onion Finely Diced
  • 2 Tablespoons Fresh Cilantro Roughly Chopped
  • Juice Of 1 Lime
  • Salt & Pepper To Taste
  • 8 Egg Roll Wrappers

For The Dipping Sauce

  • ¾ Cup Fresh Cilantro Roughly Chopped
  • Cup Sour Cream
  • 1 Jalapeno Pepper Seeded and Deveined
  • 2 Tablespoons Mayonnaise
  • 1 Clove Garlic Minced
  • Juice of 1 Lime
  • Salt and Pepper To Taste

Instructions

  • In a medium bowl combine cilantro, sour cream, jalapeno, mayonnaise, garlic, and lime juice. Season with salt and pepper to taste.
  • In a large dutch oven heat oil over medium high heat.
  • In a large bowl mash avocados until smooth. Stir in lime juice, onion, and tomato. Fold in cilantro. Season with salt and pepper to taste.
  • Lay out egg roll wrappers. Spread with avocado mixture. Then, bring the bottom edge of the wrapper over the filling, being sure to fold in the sides. Roll until you reach the top of the wrapper. Then dip your finger in water, and trace around the edges, pressing as you go.
  • Repeat for remaining 7 egg rolls.
  • Fry a few at a time for 2-3 minutes ,or until golden brown and crispy. Do not over crowd the pan.
  • Drain on paper towels.

    I am a huge fan of anything with avocado and these rolls are right up my alley! Since my son adores them (and doesn't get them too often!) I will definitely be making these when he comes home this summer!! Love how easy the recipe is!
