Blueberry Mojito

This time of year blueberries are so easy to come by. I love baking desserts like blueberry bundt cake. I've even used the in a savory context like with my blueberry bbq sauce ribs.
Another recipe we make often is this blueberry mojito. It features juicy berries, tart lime, and smooth rum. It's ready in no time and doesn't require any fancy equipment either.

- Blueberries: When picking blueberries at the market, go for ones that are plump, firm, and dry with a slight silvery sheen. This is called bloom and its nature's wax sealant. Skip any that look wet or wrinkled.
- Rum: White rum has a clean, subtle sweet flavor that won’t overpower the drink. I like the brand Bacardi. Avoid dark or spiced rums. Use leftover rum in my Bahama Mama, Hurricane, or Daiquiris.
- Mint: Don’t skip muddling the mint—it helps release its flavorful oils. The sugar acts like an abrasive, much like a sugar scrub for your skin in the bathtub. Save your leftover mint and try my strawberry mojitos next.
- Lime: To get the most juice from a lime, roll it on the counter and/or microwave it for a few seconds. Avoid bottled lime juice, as it lacks flavor.
- Club Soda: Club soda is carbonated water with added minerals like sodium bicarbonate and potassium sulfate, giving it a crisp, slightly salty taste. It adds fizz without sweetness. You can use sparkling water or soda if you prefer a sweeter drink.

Learn From My Mistake
Be sure to use spearmint which has a mild sweet mint flavor not peppermint. Spearmint if what you'll usually see labeled mint in the store.
I once used peppermint from my herb garden instead and it was way to spicy/strong.

Absolutely! Double the recipe for 4 drinks or triple for 6. Add the club soda just before serving to the individual glasses so it doesn't go flat.

Easy Blueberry Mojito

Ingredients
- 1 Cup Fresh Blueberries (Set aside a few for garnish if desired)
- 4 Ounces Rum
- 10 Fresh Mint Leaves
- 2 Teaspoons White Sugar
- Juice of 2 Limes
- 6 Ounces Club Soda
- Ice Cubes
Instructions
- Blend or muddle blueberries until smooth. Set aside.
- Use a muddler or wooden spoon to blend in mint leaves and sugar.
- Stir in rum, lime juice, and blueberry mixture.
- Pour into glasses over club soda & ice. Gently stir.
- Garnish with extra blueberries,lime, and mint if desired.
