I love fruity cocktails like the Bahama mama, the daiquiri, the tequila sunrise, and of course this Strawberry Mimosa. Can we just take a second to raise a toast to the wonderful Mimosa? CHEERS! (I'll drink that!) Invented in the early 1900s, this drink is a staple at brunch and bookclubs everywhere.

Ingredient Notes
- Strawberries: Fresh or frozen berries will work just fine.
- Raspberries: These add wonderful tartness. Again fresh or frozen will work.
- Champagne: Mimosas are very forgiving when made with cheap champagne. I like to use dry (also called brut) champagne to avoid an overly sweet cocktail. Prosecco, Cava, or another sparkling wine would work too. Use a sparkling wine you like to drink, and things will turn out well.
How To Make Strawberry Mimosas
- Cook fruit: Cook strawberries and raspberries in a saucepan, heat until softened. Add sugar and cook until softened.
- Blend: Blend and strain. Add cream and vanilla.
- Freeze: Freeze mixture in ice cube trays.
- Serve: Add ice cubes into a glass and top off with Champagne.
Can You Make Them Ahead?
Yes, follow the recipe as written, and store ice cubes in the freezer for up to a week. Add champagne just before serving so it stays bubbly.
Fun Variations
- Mix up the fruit: Blueberry, Mango,raspberry, or Peach would be tasty too.
- Make It Non-Alcoholic: Substitute sparkling grape juice or lemon-lime soda for the champagne.

- Chill: Chill your glasses to keep your drink cold.

Strawberry Mimosa
Ingredients
- 12 Ounces Raspberries Frozen
- ½ Cup Strawberries Frozen
- 2 Tablespoons White Sugar To Taste
- 1 Cup Half and Half
- ½ Teaspoon Vanilla Extract
- 1 Bottle Champagne
- Strawberries For Garnish If Desired
Instructions
- In a medium sauce pan, combine raspberries, and diced strawberries. Heat over low/medium heat until soft (~8-10 minutes).
- Add sugar to taste.
- Cook for another 5-7 minutes stirring frequently. Cool for ~5 minutes.
- Blend or puree. Strain.
- Return to sauce pan. Add cream and vanilla. Stir until combined. Pour into an ice cube tray. Freeze for 4-6 hours.
- Pour champagne into champagne flutes (about ½ way full). Add 3-4 ice cubes to each glass.
- Garnish with additional strawberries if desired.
