You cannot just throw chocolate and marshmallows on something and call it Smores. I'm tired of seeing brownies with marshmallows or bananas with chocolate and  marshmallows called Smores something or other. Grahams are essential!!

Which is graham crackers play a major part in these Smores Whoopie Pies.  The cakey cookies are made using graham crackers crumbs.

The filling is a decadent combination of marshmallow buttercream and silky smooth chocolate ganache. The end result is even better than Smores. Promise me you'll try them before summer is over?

Ingredients

For the Whoopie Pies

  • 1 ¾ Cup Graham Cracker Crumbs ~15 Graham Crackers Crushed
  • 1 Cup + 2 Tablespoons All Purpose Flour
  • 1 ½ Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • ½ Cup Whole Milk
  • 2 Teaspoons Vanilla Extract
  • 1 Teaspoon Vinegar
  • ½ Cup Butter Softened
  • 1 Cup Brown Sugar Packed
  • 2 Eggs

For the Marshmallow Buttercream

  • 3 Cups Powdered Sugar
  • ½ Cup Butter Softened
  • 1 Cup Marshmallow Fluff
  • ¼ Cup Whole Milk
  • 1 Teaspoon Vanilla Extract

For the Ganache

  • 14 Ounce Bag Milk Chocolate Chips
  • ¼ Cup Heavy Whipping Cream

Instructions

For the Whoopie Pies

  • Preheat oven to 375 deegrees F. Line a cookie sheet with parchment paper.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Stir in eggs ,vanilla, and milk.
  • Mix in baking soda, vinegar, baking powder, and graham cracker crumbs.
  • Stir in flour a little at a time until just combined.
  • Drop batter onto pan using an ice cream scoop. Bake for 8-10 minutes or until a toothpick inserted in the center comes out clean. Allow to cool on pan for 2-3 minutes.

For the Buttercream

  • In a large bowl cream butter and marshmallow fluff. Stir in vanilla extract.
  • Gradually add powdered sugar a little at a time. Add milk as needed until you reach your desired consistency.

For the Ganache

  • In a microwave safe bowl, heat whipping cream for 45-60 seconds.
  • Fold in chocolate chips until smooth.
  • Spread approximately 1 tablespoon of both ganache and marshmallow buttercream onto half of the cookies. Top with remaining cookies.
