Raspberry Lime Rickey Cocktail
My Raspberry Lime Rickey is tart and refreshing without being overly sweet. This drink is super easy to make and great for parties.

I love fruity drinks like the raspberry daiquiri, the Bahama Mama, and the Sea Breeze. Another drink I make often is this Raspberry Lime Rickey. It is fruity, bubbly, and easily scaled up or down.
Ingredient Notes and Shopping Tips

- Raspberries: Choose dry plump berries that don't have any juice or liquid sitting in their container. You can also use thawed and drain frozen berries.
- Lime: Always choose fresh lime juice for the best flavor. To get the most juice from your lime roll it on the counter or microwave it for 20-30 seconds. Be sure to use a peeled slice for muddling as the white pith is very bitter.
- Chambord: This cognac based liquor tastes like black raspberries with a hint of vanilla. Crème de Framboise is a good substitute that looks and tastes similar. Or try creme de cassis which has a similar color but its flavored with blackcurrants.
- Vodka: I like Absolut's Raspberri vodka. Stoli Razberi is also good. You could even use unflavored vodka or gin.
- Club Soda: You could also use a flavored sparkling seltzer is desired.

Ingredients
- 4 Raspberries
- 1 Slices Lime Peel Removed
- 1 Ounce Chambord Optional
- 2 Ounces Raspberry Vodka
- 1 Ounce Lime Juice Freshly Squeezed
- Club Soda
- Lime, Raspberries, and Mint If desired, for garnish

Instructions
- In a small bowl, muddle the raspberries and lime slice.
- Add Chambord, both vodkas, and fresh lime juice into the cocktail shaker. Shake vigorously for 15-20 seconds.
- Add ice and muddled raspberry mixture into a glass. Pour in cocktail shaker mixture. Strain if desired.
- Top with club soda.
- Garnish with lime, raspberries and mint. Enjoy responsibly.
