I'm always craving pasta. I've previously shared fun varieties like pizza pasta, sun dried tomato pasta, and buffalo chicken pasta. This one pot sausage pasta is what I go with when I need dinner on the table NOW. It has everything I love about pasta: hearty sausage, tons of cheese, and fresh herbs. No draining, no premade sauce, and no giant pile of dishes at the end of the night!

Ingredient Notes & Shopping Tips

- Pasta: I like linguine. Spaghetti would also be great. You could eve use rotini or farfalle.
- Chicken Broth: I like using low sodium so you can add salt to taste. Regular broth tends to be too salty.
- Sausage: I used precooked smoked sausage with parmesan and mozzarella from Walmart. You can use any fully cooked sausage.
- Tomatoes: Cherry tomatoes out of season? You can sub a 14 ounce can of tomatoes just be sure to drain them first.
- Parmesan Cheese: Shred your own. It will taste so much better and melt more smoothly.
- Basil: Look for bright green leaves without any dark spots. Keep it fresh until you're ready to use it by wrapping in a damp paper towel.

- Slice Sausage on the Bias: Cutting diagonally give you more surface area to brown. Color=flavor.
- Deglaze After Searing: After browning the sausage add a splash of broth. Not only will this allow you to loosen all those tasty brown bits, but you'll prevent scorching your pan too.
- Save Your Parmesan Rind: If your cheese has a rind toss it in or extra flavor while simmering. Remove before serving.
- Don't Overcook Pasta: Pull off the heat just before it's done. It will keep cooking in the hot pan. This ensures it is never mushy or overcooked.
- Stir frequently to prevent sticking.

One Pot Italian Sausage Pasta

Ingredients
- 3 Cups Grape Tomatoes Halved and Divided
- 1 Large Sweet Onion Thinly Sliced
- 1 Package Precooked Mozzarella and Parmesan Sausages
- 20 Fresh Basil Leaves divided
- 4 Garlic Cloves Minced
- 1 Pound Box Linguine
- 1 ½ Teaspoons Kosher Salt
- 1 Teaspoon Freshly Ground Black Pepper
- 4 Cups Chicken Broth
- ½ Cup Water
- 1 Cup Grated Parmesan Cheese
Instructions
- Cut grape tomatoes in half. Set aside 1 cup of tomatoes, 10 basil leaves, and grated cheese.
- Combine remaining ingredients in a large dutch oven.
- Over medium high heat, bring to a boil.
- Cook for 7-10 minutes or until al dente. Stir occasionally.
- Stir in cheese until melted.
- Top with remaining tomatoes and basil before serving.
