I am known for my copycat recipes like Applebee's Fiesta lime chicken, PF Chang's Lettuce Wraps, and Bang Bang Shrimp. My newest creation is this Texas Roadhouse Roadkill recipe.
Don't let the name scare you! It is really just a juicy hamburger steak with onions, mushrooms, and cheese. It tastes just like the steakhouse version and is easy enough for busy weeknights. Serve with rolls, instant pot mashed potatoes, or Rattlesnake bites for a comfort food meal that will stick to your ribs.

  2. Use the Right Beef: 80/20 is flavorful and fatty enough to keep the patties juicy without being overly greasy.

  • Ground Beef: I like using 80/20. It has good flavor and enough fat to ensure it stays moist. Chill before cooking if at all possible to help them hold their shape. I
  • Mushrooms: I like using Baby Bella (also called Cremini) as they are firm and flavorful. You can also use button mushrooms which are slightly softer and less flavorful. Avoid frozen shrooms which contain more water. s
  • Cheese: Monterey Jack is classic as it's what the restaurant uses. Shred your own for a smoother melt. You could also use Swiss, pepper jack, or cheddar depending on your family's preferences. .

  1. Don't Overmix: Overworking the meat will make the patties tough and dense.
  2. Don't Skip Chilling the Meat: This helps prevent it from falling apart.
  3. Use a Hot Pan: If the pan is too cool the patties will stick and steam instead of searing.
  4. Treat It Like a Burger: All our hamburger tips apply here. Form a dimple in the center to prevent the patty from puffing up and avoid pressing down which squeezes the juices out.
  5. Rest: Rest for 4-5 minutes after cooking to give the juices time to redistribute. We want them inside the meat not on our plate!

Learn From Our Mistakes

The skillet handle gets very hot in the oven. I like to drape a kitchen towel over it in the test kitchen after removing from the oven. This helps us remember not to grab it and prevents us from burning our hands!

Ingredients

  • 2 Pounds Ground Beef I used 80/20
  • 2 Tablespoons Worcestershire Sauce
  • 2 Teaspoons Seasoning Salt I used Lawry's
  • Salt/Pepper To Taste
  • 1 Egg Beaten
  • 1 Onion Sliced
  • 2 Tablespoons Butter Sliced
  • 1 Cup Baby Bella Mushrooms
  • 1 Cup Monterey Jack Cheese Shredded

Instructions

  • In a large bow, combine ground beef, Worcestershire sauce, seasoning salt, and egg until just combined.
  • Using wet hands form beef mixture into 4 equal size patties around ¾ inch thick. Press a dimple into the center of each patty and put in the fridge until ready to use.
  • Preheat oven to 350 degrees F.
  • In a large oven safe skillet melt butter over medium heat.
  • Cook onions and mushrooms for 6-8 minutes until they begin to brown. Season with salt and pepper to taste.
  • Add beef patties and sear on both sides for 3-4 minutes.
  • Top with onions and mushrooms and bake for 10-12 minutes until it reaches 160 °F
  • Top with cheese and bake covered for 1-2 more minutes.

Notes

If you don't have an oven safe skillet you can transfer everything to a casserole dish instead.
