One of my favorite candies to make is Buckeyes.
Chocolate + Peanut Butter =Love
They are essentially sweetened peanut butter dipped in chocolate. However the process is long and difficult. You need to dip the peanut butter balls in the melted chocolate, then wait for them to harden.
I’ve burned my fingers trying to make sure everything is coated, and flung chocolate onto every inch of my kitchen. The last thing I want to do after a long day is mess with dipping 100 things in chocolate.
I was thinking about how I could make them easier. Why not just pour everything into a square pan?

Thus Buckeye Bark was born. The bark is supposed to be jagged and irregular, so I don’t have to aim for perfection.
Best of all, it contains the goodness of peanut butter. Peanut butter is packed full of protein and vitamins/minerals. This helps provide lasting energy.
As a vegetarian, peanut butter is a yummy yet affordable protein source. I like soy products, but they’re not something I’d want everyday. However I can easily enjoy peanut butter at least once per day.
While I wouldn’t call this recipe healthy, you don’t have to feel guilty about eating it either.
Buckeye Bark Recipe
Ingredients
- 2 Bags Chocolate Candy Wafers
- 1 pound creamy peanut butter I used Skippy
- 2 cups powdered sugar
- 1 stick butter melted
- 1 teaspoon vanilla extract
Instructions
- Line a 9x13 inch pan with tin foil or parchment paper. Spray with non stick cooking spray.
- Melt one bag of the chocolate candy wafers according to the package directions. I just did mine in a glass bowl in the microwave. Pour into your pan and spread smooth with a spatula.
- Put the pan in the freezer for 5 minutes to harden the chocolate.
- <b>Note:</b> If your freezer is full (and you dodge out of the way when you open it) you can also stick in the fridge for 10-15 minutes.
- Mix peanut butter, powdered sugar, butter, and vanilla until smooth. Press over chocolate layer. Put in the freezer for another 5 minutes.
- Melt the remaining chocolate and put over the peanut butter layer, again smoothing with a spatula.
- Once set break up into pieces with a sharp knife.
- Store in the fridge, but let it sit at room temperature before enjoying.

I have never had buckeye bars but back in high school they had similar peanut butter bars. They were amazing and I still remember them. This recipe looks like it could be how they made it. I am going to make these and enjoy them!
