My easy, make-ahead Strawberry Mimosas are fruity, creamy, and so easy to make. They only require a few ingredients and taste like strawberry sherbet!

This Strawberry Mimosa will have you staying in for brunch!

I love fruity cocktails, such as the Bahama Mama, the daiquiri, the tequila sunrise, and, of course, this Strawberry Mimosa. It is the real MVP that made it acceptable to drink before noon.

  1. Ice Cube Tray Sorbet (yes, really!): Do you remember sherbet punch from the 90s? My Strawberry Mimosa Recipe is similar because it includes a homemade creamy sorbet made right in your ice cube tray!.
  2. Beautiful Color: The bright pink color is perfect for Valentine's Day, baby showers, and Bachelorette parties.
  3. No OJ: I'm not a fan of this tart breakfast drink so I made a creamy variety instead. Do NOT add OJ to this exact recipe, as it will curdle! 🙂

We love it for brunch, especially on holidays like Mother's Day. It's also a favorite at my book club. Want something nonalcoholic? Try my strawberries and cream frappuccino.

Ingredient Notes and Shopping Tips

  • Strawberries and Raspberries: Fresh or frozen berries will work just fine.
  • Champagne: Mimosas are very forgiving when made with cheap champagne.
    • Prosecco is also a good choice as it's more affordable than champagne. It can be on the sweeter side, so just be sure to choose a dry variety.
    • Cava is even cheaper than champagne and is perfect if you're looking for a dry sparkling wine on a budget. 
  • Half and Half: If you don't want to buy half and half just for this recipe you can use equal parts milk and heavy cream.
  • Sugar: Depending on how tart your raspberries are, add more or less to taste as you go.

My Preference

I like to use dry (also called brut) champagne since the fruit already has a lot of sweetness.

Krystle's Tips

  1. Chill: Chill your glasses to keep your drink cold.
  2. Champagne Flutes: Champagne is served in its namesake glass because it helps it stay fizzy. If you don't have the glass version in your cabinets yet, you can usually find plastic ones at party supply stores.
  3. Avoid stirring the drink, which can lead to a flat drink. Instead, swirl your glass to combine everything.
  4. Store in the freezer for up to 2 months.

Chill out!

Be sure your champagne is ice cold too. I like to put mine in the fridge about 24 hours ahead.

Can You Make Them Ahead?


Yes, follow the recipe as written, and store ice cubes in the freezer for up to a week. Add champagne just before serving so it stays bubbly.

Ingredients

  • 12 Ounces Raspberries Frozen
  • ½ Cup Strawberries Frozen
  • 2 Tablespoons White Sugar To Taste
  • 1 Cup Half and Half
  • ½ Teaspoon Vanilla Extract
  • 1 Bottle Champagne
  • Strawberries For Garnish If Desired

Instructions

  • In a medium sauce pan, combine raspberries, and diced strawberries. Heat over low/medium heat until soft (~8-10 minutes).
  • Add sugar to taste.
  • Cook for another 5-7 minutes stirring frequently. Cool for ~5 minutes.
  • Blend or puree. Strain.
  • Return to sauce pan. Add cream and vanilla. Stir until combined. Pour into an ice cube tray. Freeze for 4-6 hours.
  • Pour champagne into champagne flutes (about ½ way full). Add 3-4 ice cubes to each glass.
  • Garnish with additional strawberries if desired.
