Shrimp Fried Rice With Egg
My shrimp fried rice with egg tastes just like your favorite takeout order. The shrimp is super tender and the rice is full of flavor. This easy recipe is ready in less than 30 minutes.

At the end of the day I am exhausted so I'm a big fan of Asian cuisine. It cooks up quick and always hits the spot. I've previously shared recipes like wonton tacos, sticky Asian meatballs, and copycat PF Chang's lettuce wraps. Another meal I make often is this shrimp fried rice. The shrimp and rice cook in hardly at time at all and all in one pan with minimal chopping.
Why This Recipe Works: A Sprinkle of Food Science
- Cooking Veggies First: This cooks off their moisture to prevent the rice from being gummy.
- Sear Shrimp First: We cook them and then remove them from the pan to prevent the from being overcooked and tough.
- No Leftover Rice Required: Instead we'll use instant rice with less water!
Ingredient Notes and Shopping Tips

- Shrimp: Look for peeled and deveined shrimp to save time. Be sure to pat dry to remove any extra moisture so they sear well.
- Soy Sauce: Regular or low sodium work. I like Kikkoman.
- Sesame Oil: Have a gentle hand here as this stuff is potent. You can always add more, but you can't take it out.
- Oil: Any neutral oil with a high smoke point works. I used vegetable, but canola or peanut work well too.
- Rice: I used instant rice. But leftover short grain rice like Jasmine or Basmati work great too. To mimic leftover rice I reduced the water by 2 tablespoons. Optional: If rice still seems moist you can dry it in front of a fan for ~30 minutes.

- Use a screaming hot pan: We want the rice to be crispy and a hot pan will quickly evaporat any remaining moisture.
- Don't Overcook the Shrimp: It is done when it is opaque and pink. It should have a C shape not an O shape. C=Cooked O=overdone.
- Fry in batches if you need to to avoid overcrowding the pan which can bring down the temperature. This can give wok like texture without requiring pan.
- Perfectly Cooked Eggs: Don't drizzle eggs over rice. Instead make a well in the center with a bit of oil. Cook and then fold into rice.

Shrimp Fried Rice With Egg

Ingredients
- 3 Tablespoons Soy Sauce
- 1 Tablespoons Sesame Oil
- ½ Teaspoon Ginger Powder
- 2 Tablespoons Vegetable Oil
- 1 Pound Medium Shrimp Peeled and Deveined
- Kosher salt and freshly ground black pepper to taste
- 2 Cloves Garlic Minced
- 1 Sweet Onion Diced
- 2 Carrots Peeled and Grated
- ½ Cups Frozen Peas
- 2 Large Eggs
- 3 Cups Cooked Minute® Rice Or Leftover Jasmine or Basmati Rice
- 2 Green Onions Sliced
Instructions
- In a medium saucepan bring 2.5 cups + 2 tablespoons of salted water to a boil. Stir in 3 cups of White Minute Rice. Remove from heat and cook for around 5 minutes or until the water is absorbed.
- In a small bowl, whisk together soy sauce, sesame oil, and ginger powder. Set aside.
- In a large skillet heat oil over medium high heat. Cook shrimp for 2-3 minutes or until pink. Season with salt and pepper to taste. Set aside.
- Use the same skillet to cook your onion until softened. Then add garlic.
- Add carrots, and peas. Cook until tender.
- Push vegetables to the side of the pan. Drizzle a little bit of oil and then scramble 2 eggs in the center of the pan.
- Stir rice, green onions, and prepared sauce into the eggs and vegetables. Stir constantly until everything is heated through.
