Cookie Monster Cupcakes

These moist cookie monster cupcakes feature oreo cake and fluffy buttercream. They are easy to make, and loved by all ages! Serve with Cookie Monster Ice Cream for the ultimate treat.

Just like my Minion and Mermaid Cupcakes, these are super fun to make with kids!

He is known for his love of cookies. (He might be the only person to love cookies more than me!). With these Cookie Monster Cupcakes, you get to bring your favorite Sesame Street character to life. Have you ever seen such cute cupcakes? They’re simple to make too, no fancy fondant work required!

Ingredients

For the Cupcakes

  • Unsalted Butter: I like to use unsalted butter so we can control the amount of salt in the recipe. Different brands of salted butter may be too salty for a sweet recipe like these cupcakes.
  • White Sugar
  • Egg
  • Flour, Salt, and Baking Powder
  • Milk: I always use whole milk for the best texture.
  • Vanilla Extract
  • Canola Oil: You could also use vegetable oil here.
  • Mini Chocolate Chips
  • Crushed Oreos: I crushed mine in a plastic baggie with a rolling pin. You can also use a food processor if you have one.

For the Frosting and Decorations

  • Unsalted Butter: Be sure to soften it first.
  • Powdered Sugar
  • Vanilla
  • Heavy Cream: Use just enough to get your frosting to the perfect consistency.
  • Royal Blue Gel Food Coloring: This gives them their vibrant blue color with just a few drops.
  • Edible Eyes
  • Mini Chocolate Chip Cookies: I used Chips Ahoy. Homemade Mini Chocolate Chip Cookies would work well too.

How To Make Cookie Monster Cupcakes

For the Cupcakes:

  1. Prep Work: Preheat oven and line pan with paper liners.
  2. Cream Butter: Combine butter and sugar. Add in eggs, oil and vanilla.
  3. Dry Ingredients: In a large bowl, whisk flour, salt, and baking powder together.  Alternate wet and dry ingredients until just combined.
  4. Fold in chocolate chips and crushed oreos.
  5. Bake:  Fill liners and bake for about 21 minutes.

For the Frosting:

  1. Cream butter, and add vanilla. Add powdered sugar a little at a time until just combined. Add heavy cream as needed.
  2. Add blue food coloring until you reach your desired shade.
  3. Pipe or spread onto cupcakes. Add edible eyes, and a cookie.

How Can I Tell When They Are Done?

There are two ways to tell when cupcakes are done. When the timer goes off I like to insert a tooth pick into the center of the cupcake. If the toothpick comes out clean, they are done. If there are a few crumbs that is okay too. However, if you still see raw batter keep baking for a few more minutes.  You can also gently touch the top of the cupcake. If it bounces back, the cupcakes are done. If it sinks, the cupcakes need more time.

How To Store and Freeze 

Always store in an airtight container. A large plastic dish will work just fine. You can use a storage container like this to store or transport.  Do not store your cupcakes in the refrigerator. This can dry your cupcakes out. In addition,  you can freeze your cupcakes. Freeze the cupcakes individually for one hour until the icing is frozen. Then, you can store in a plastic dish or freezer bag. To thaw, remove the cupcakes from the bag and let them come to room temperature.

Frequently Asked Questions

What Frosting Tip Should I Use?

I use a disposable piping bag fitted with a star tip. Cover cookie monster in small stars to recreate his furry look. You can find piping bags and decorating tips at your local craft store or online at Amazon.

Why Do You Use Gel vs. Liquid Food Coloring?

I prefer to use gel food coloring because it is much easier to a great a bold bright blue color.  When using liquid food dye to color frosting, it can cause the icing to become watered down. When frosting is not stiff, it does not hold the shape well.

What Can I Use If I Can’t Find Edible Eyes?

Sometimes, I can not find the edible eyes at my local store. These edible eyes can be bought online. If you can not find edible eyes, you can use candies such as M&Ms. While they may not look exactly the same, they’ll still be cute and yummy.

Ingredients

For the Cupcakes

  • ⅓ Cup Unsalted Butter Softened (About 5 Tablespoons)
  • 1 Cup White Sugar
  • 1 Egg
  • 2 Cups Flour
  • ½ Teaspoon Salt
  • 2 ½ Teaspoon Baking Powder
  • ¾ Cup Whole Milk
  • 1 Teaspoon Vanilla Extract
  • 3 Tablespoons Canola Oil
  • 1 Cup Mini Chocolate Chips
  • ½ Cup Oreos Crushed About 8 Cookies

For the Buttercream

  • 1 Cup Unsalted Butter softened
  • 2 ½ Cup Powder Sugar
  • 1 Teaspoon Vanilla
  • 3 Tablespoons Heavy Cream
  • Royal Blue Gel Food Dye
  • Edible Eyes
  • 6 Mini Chocolate Chip Cookies Halved

Instructions

  • Preheat oven to 350 degrees F. Line a cupcake pan with paper liners.  
  • In a large bowl, cream butter, sugar, and vanilla until light and fluffy. Add egg and oil. 
  • In a large bowl whisk flour, salt and baking powder together. 
  • Gradually add flour mixture and milk until just combined. Do not over mix. 
  • Fold in chocolate chips and crushed oreos.
  • Fill cupcake liners about ¾ of the way full. Bake for 21-23 minutes or until a toothpick inserted in the center comes out clean. 

For the Frosting

  • In a large bowl, cream butter and vanilla. Add powdered sugar a little at a time. Add heavy cream as needed until you reach your desired consistency. 
  • Add a few drops of blue food coloring until you reach your desired shade. 
  • Pipe or spread onto cooled cupcakes. 
  • Add 2 edible eyes, and a chocolate chip cookie for decoration.
