My Kentucky Butter cookies feature a super soft and chewy cookie topped with decadent butter glaze. This easy recipe only requires a handful of ingredients and is ready in less than half and hour!

I love baking cookies. Some of my favorites are birthday cake cookies, Gideon's cookies, and coffee cake cookies. My newest creation is these Kentucky Butter cookies. They come together fast! My fiancé isn't usually a sweets person, but he ate 2 of these in one sitting. The glaze is so much better than traditional frosting!

Ingredient Notes and Shopping Tips

  • Cake Mix: I like Betty Crocker's yellow cake mix best. White cake mix will be a different color and not as rich in flavor. You should use chocolate or red velvet for a fun twist.
  • Eggs: Use room temperature eggs to help them incorporate smoothly. Place them on the counter for around 30 minutes. Short on time? Place in a glass of warm water for a few minutes.
  • Vanilla: My homemade vanilla works great here!

Troubleshooting and Tips: Steal My Culinary School Secrets

  1. Dough Is Too Sticky: This dough is going to be thicker and stickier than your typical cookie dough. If it's too difficult to work with, pop it in the fridge for 20-30 minutes.
  2. Cookies Fall Apart: Allow them to sit on the cookie sheet for a solid 5 minutes. They'll firm up as they cool.
  3. Cookies Are Dry: This usually indicated overbaking. Pull them when the edges are set. It's okay if the center still looks a little underdone. They'll continue to cook on the pan when they come out of the over for a few minutes.
  4. Cookie Bottoms Are Burnt: This is usually due to using dark baking pans which absorb more heat. Use a light baking pan if at all possible. You can also put one dark pan on top of the other to prevent the bottom from getting too hot.
  5. Glaze Didn't Stick: Glaze the cookies when they're warm but not hot. Warmer cookies will absorb the glaze better.

Ingredients

For the Cookies

  • 1 Box Yellow Cake Mix 15.25 Ounces
  • 2 Eggs Room Temperature
  • ½ Cup Unsalted Butter Melted
  • 1 Teaspoon Vanilla

For the Glaze

  • ¼ Cup Unsalted Butter
  • ½ Cup Granulated Sugar
  • 1 Tablespoon Water
  • 1 Teaspoon Vanilla

Instructions

For the Cookies

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • In a large bowl, combine cake mix, eggs, melted butter, and vanilla until combined. It will be thick and sticky.
  • Use a cookie scoop to scoop dough onto prepared pan. I used a 2 tablespoon (#40) scoop.
  • Bake for 12-14 minutes or until the edges are set and centers still look slightly underdone. Do not underbake.
  • Cool for 5 minutes on the pan.

For the Glaze

  • In a small saucepan over medium-low heat, melt butter. Stir in sugar and water.
  • Heat until sugar dissolves, but do not allow to boil. Remove from heat and stir in vanilla.
  • Spoon or brush glaze over slightly warm cookies.
  • Let sit 15-20 minutes to absorb. Enjoy!
