I love Smores treats in the summer like my no bake Smores pie and my Smores dip. This Smores cheesecake takes it to a whole other level! It has a crunchy crust, creamy cheesecake, and perfectly gooey topping. It's perfect for summer picnics and birthdays.

Why This Recipe Works: A Sprinkle of Food Science

  • Crust with marshmallows and chocolate baked right in: This creates pockets of melted chocolate from the bottom up.
  • Super Rich and Creamy Filling: Sour cream adds tang and heavy cream adds fat for an ultra rich filling.
  • Water Bath: The water bath helps it bake evenly and slowly so it has a rich custard like texture that is never rubbery.

  • Graham Cracker Crumbs: Around 10-12 crackers should give you the required amount of crumbs.
  • Cream Cheese: Use full fat softened cream cheese. I like to cube mine and leave it at room temperature for 20-30 minutes. If you're short on time you can also dunk the foil package in warm water or 5-10 minutes.
  • Sour Cream: Use full fat for the best results.
  • Eggs: Bring to room temperature. You can also place them in a cup of warm water for 5-10 minutes.

  1. Don’t overmix: This can incorporate too much air which can cause cracks or a rubbery texture. Mix until everything is just combined.
  2. Use 2 layers of foil: Wrap your springform pan well to prevent leaks.
  3. Don't Overbake: Cheesecake is done with the edges are set. It's okay if the center is still a little jiggly. It will firm up as it cools.
  4. Cool Gradually: I like to cool in the oven with the door open for 10 minutes. Then I'll leave on the counter for around an hour before refrigerating.
  5. Broil Carefully: Marshmallows can go from toasty to burnt in a minute or two. You can also use a kitchen torch if desired.

Ingredients

For the Graham Cracker Crust

  • 1 ½ Cups Graham Cracker Crumbs
  • ½ Cup Brown Sugar
  • 2 teaspoon Vanilla Extract
  • 5 tablespoon Butter Melted
  • ¾ Cup Mini Chocolate Chips
  • 1 Cup Mini Marshmallows

For the Cheesecake

  • 4 8 Ounces Packages Cream Cheese, Softened
  • ½ Cup Sour Cream
  • 2 Eggs
  • ¾ Cup Heavy Cream
  • ¾ Cup White Sugar
  • 2 Tablespoons Corn Starch
  • 2 teaspoon Vanilla Extract

For the Topping

  • 10 oz Hot Fudge Sauce Heated
  • 2 Cups Mini Marshmallows

Instructions

For the Graham Cracker Crust

  • Preheat oven to 325 degrees F. Grease a 9 inch cake pan with non stick cooking spray.
  • In a medium bowl, combine graham cracker crumbs, melted butter, vanilla, and brown sugar. Evenly press mixture into the bottom and sides of your prepared pan.
  • Spread marshmallows and chocolate chips over the graham cracker crust.

For The Cheesecake

  • Beat cream cheese until light and fluffy. Stir in sugar, corn starch, vanilla extract and eggs. Fold in sour cream and heavy cream.
  • Pour cheesecake batter evenly over crust.
  • Place your cake pan into a large roasting pan filled halfway full with water.
  • Bake for 90-95 minutes or until set. Open the oven door, and let the cheesecake rest for 10 minutes before removing form the oven.
  • Cool completely.

For The Topping

  • Preheat the oven broiler.
  • Spread hot fudge over the cheesecake. Top with marshmallows.
  • Brown marshmallows for 1-2 minutes or until lightly toasted.
  • Store in the refrigerator.

      Yes that should be okay. I wouldn't keep it in the fridge much longer than 3-5 days total though.

      I would not suggest making this cheesecake without the water bath. I know it is annoying, but it leads to a much better end result.

        How can you use a spring form pan in a water bath without wrapping the pan with foil first?? Don't see how you can just grease the pan and then put it in a water bath. ????
