My buttery, crunchy Ritz Cracker chicken is baked, not fried. This easy recipe has only 5 ingredients and always has my family begging for seconds. Serve with fried mashed potato cakes for the perfect comfort food dinner.

If I had to pick one meat to eat for the rest of my life, it would be chicken. It's so versatile. You can add fun flavors like Fiesta lime or buffalo.   My newest favorite is this Ritz Cracker chicken. Buttery ritz crackers make the perfect crunchy crust. Plus, we always have them on hand in our pantry for quick snacks. This is great for busy weeknights where you're trying to get dinner on the table after work and before sports practice. We also love it for Saturday dinner with the inlaws or even meal prep.

Ingredient Notes and Shopping Tips

  • Chicken Breasts: You can also use chicken tenders or even cut into nuggets just adjust the bake time.  I like to buy hand-trimmed breasts that already have any excess fat removed.
  • Milk: Use whole milk. It helps tenderize the chicken.
  • Ritz Crackers: Add extra flavor by using flavored Ritz such as Garlic Butter or Garden Vegetable.

Can I Use Frozen Chicken Breasts?

No, I suggest thawing your chicken before making this recipe. The easiest way to do this is 12-24 hours in the fridge. You can also defrost for around 8 minutes per pound on the defrost setting. Finally, you can submerge them in cold water that you change out frequently if needed ASAP.

Can I Cook This In the Air Fryer?

Yes! Cook at 375 degrees. I suggest around 10-12 minutes for THIN breasts and 7-9 minutes for tenders.

My favorite is green beans and mashed potatoes. It also goes great with tater tots,  corn on the cob, or even broccoli salad.

  1. Wet Hand Dry Hand Method: Use one hand for wet ingredients and the other for dry. This will prevent you from breading your fingers!
  2. Easily Crush Crackers: No food processor, no problem! Just crush in a plastic baggie using a meat mallet or rolling pin. .
  3. You can also spray the top of the chicken with cooking spray or drizzle with a little melted butter for extra crispiness.

Super Crispy Chicken Trick

Bake chicken on a sheet pan topped with a wire baking sheet. This allows the air to circulate and makes the bottom super crispy.

Ingredients

  • 4 Boneless Skinless Chicken Breasts
  • 2 Sleeves Ritz Crackers Crushed
  • ½ Cup Whole Milk
  • 2 Cups Cheddar Cheese Shredded
  • 1 Teaspoon Dried Parsley
  • Salt and Pepper To Taste

Instructions

  • Preheat the oven to 400 degrees F. Spray a baking pan with non stick cooking spray.
  • Set up 3 shallow dishes. Fill one with Ritz cracker crumbs, and one with cheese. Fill the last with milk, salt, and pepper. Stir to combine.
  • Cut each chicken breast into 3 strips. Dip into milk first, then cheese, then cracker crumbs. Place into prepared dish. Sprinkle with parsley.
  • Bake covered for 35 minutes. Remove foil and cook for 10 more minutes or until internal temperature reaches 165 F.

    I make something very similar with cod or Haddock that I call Ritzy fish. Just Ritz crumbs mixed with a little melted butter that I put on top of the fish and bake for about 15 minutes. It's really delicious! Yours looks good too.

    1. I'll have to try as we usually deep fry out fish. This sounds like a really good twist that is baked but still crunchy!
