Simple Apple Crisp Recipe



This week is my first week back to college! I'm a second semester senior with one class left!
To be completely honest senioritis is setting in big time especially since I'm currently taking my math requirement.
When I first saw my finite math textbook I was pretty happy. I knew everything in Chapters 1-6 because I'd been learning it since high school. It wouldn't be easy, but it would be do-able.
Except we started on Chapter 8. (Now hiring math tutor, will pay with cookies,JK
So naturally instead of working on math homework, I decided to bake something. Apples are coming into season so it's the perfect time to try my Simple Apple Crisp Recipe.
If you aren't a fan of oats you'll be pleased that they're not included in my simple apple crisp recipe. However, the topping is still super crunchy. nomnomnom

Ingredients
<b>Apples:</b>
- 5-6 apples peeled cored, and sliced thin (I used Granny Smith)
- ½ cup white sugar
- 1 tablespoon ground cinnamon
- ½ cup apple cider or apple juice
- 1 tea spoon vanilla extract
<b>Topping:</b>
- 1 cup all purpose flour
- 1 cup sugar
- 1 stick cold butter
Instructions
- Preheat the oven to 400 degrees F.
- In a small mixing bowl, combine cinnamon and sugar.In a 9x9 inch pan dust a light layer of the cinnamon sugar mixture on the bottom.
- Alternate single layers of apple slices and cinnamon sugar. Cover the final apple layer with the remaining cinnamon sugar.
- Mix vanilla and apple juice. Pour over apple mixture.
- Mix flour and sugar in a small bowl. Grate butter using a flat grater over this bowl. Mix together with a pastry cutter or 2 forks until it resembles coarse crumbs.
- Sprinkle the topping evenly over the apples.
- Bake for 25-30 minutes until golden brown. Serve with whipped cream or ice cream if desired.

Simple Apple Crisp Recipe Variations:
Add oats or walnuts to the topping for an even crunchier texture.
Use whatever fruit is in season. Pears or peaches would also be great here.

Ew math. I took my math requirement online. WORSE MISTAKE EVER. I did pass, with a B, though... So, I can't complain too much. I bumped it up a notch and am taking 4, instead of 3, college classes this semester. First week is almost over, and I'm already counting the days until Summer. I don't know why though, because I'll probably do a summer internship or a summer class.
I am a sucker for those kinda deserts...so yumm!!!

This is one lovely and easy to make dessert. I sure will add some nuts or oats in the topping for extra chewiness.
