Creamy Sun Dried Tomato Pasta With Sausage
My creamy sun dried tomato pasta is made with flavorful sausage and a decadent cream sauce. This easy recipe is ready in 30 minutes and is lick your plate clean good! Serve with garlic knots for the perfect meal.

Pasta is one of my favorite foods. I've shared delicious varieties like buffalo chicken pasta, chipotle pasta, and Pasta Al Forno. My new go to is this sun dried tomato pasta. It is rich, creamy, and so flavorful. This is one I'm going to be making again and again. Best of all it is made in one pot on the stove top. It's easy enough for weeknights but still feels gourmet enough for entertaining.
Why This Recipe Works: A Sprinkle of Food Science
- Use Broth not Water: Cooking the pasta in chicken broth adds SO much flavor.
- Pasta Water Magic: Cooking the pasta in the same pot gives us liquid gold: starchy water. This gives the sauce a creamy texture that clings to pasta without sliding off.
- No Rehydrating the Tomatoes: Oil packed tomatoes don't require more time or dishes to ensure they're tender never chewy.
Ingredient Notes and Shopping Tips
- Pasta: I like penne as the ridges and hollow structure are perfect for the sauce. You could also use rotini, cavatappi, or even small shells.
- Sausage: I like andouille as its slightly spicy and its fat adds flavor to the sauce. You can use any precooked sausage like kielbasa in its place.
- Chicken Broth: I used low sodium.
- Heavy Cream: Don't be tempted to use milk or half and half as they're more likely to make your sauce split.
- Sun Dried Tomatoes: Choose oil packed. Drain and pat with paper towels before adding to your sauce.
- Parmesan Cheese: Shred your own, it will taste SO much better.

- Don't Use High Heat: Never allow cream to come to a boil or it could split. Heat over medium low until warmed through.

Creamy Sun Dried Tomato Pasta

Ingredients
- 2 ½ Cups Penne Pasta Uncooked
- 1 Tablespoon Extra Virgin Olive Oil
- 2 Links Andouille Sausage Cut Into Coins
- 2 Tablespoons Butter
- 3 Cloves Garlic Finely Minced
- 2 Tablespoons Flour
- 1 Cup Chicken Broth
- ½ Cup Heavy Cream
- ⅓ Cup Sun Dried Tomatoes In Olive Oil Drained and Roughly Chopped
- ¼ Cup Parmesan Cheese Grated
- 1 Teaspoon Italian Seasoning
Instructions
- In a large saucepan, cook pasta in salted water according to box directions.
- In a large dutch oven heat olive oil. Cook sausage until browned.
- In a large saucepan, heat butter. Add garlic and cook for ~1 minute. . Whisk in flour until lightly browned, about 1 minute. Gradually whisk in chicken broth and cook, whisking constantly, until incorporated, about 1-2 minutes.
- Whisk in flour and cook for ~1 more minute. Add in chicken broth, stirring constantly until combined.
- Stir in heavy cream, sun dried tomatoes, Parmesan, Italian seasoning, and salt/pepper to taste. Heat stirring constantly for ~2 minutes.
- Combine pasta, sausage, and sauce. Garnish with parsley if desired.
