My Pineapple dream dessert features a toasty graham cracker crust layered with rich cheesecake filling and a creamy pineapple topping. This easy dessert is always the first thing gone at potlucks!
Preheat oven to 300 F. Spray an 8x8 or 9x9 pan with nonstick cooking spray or line with nonstick foil.
In a large bowl, combine 2 cups of graham cracker crumbs, brown sugar, and butter. Press into prepared pan with a measuring cup. Bake for 8-10 minutes or refrigerate for 20-30 minutes if you don't want to bake it.
In a large bowl, combine cream cheese and butter until light and fluffy. Stir in powdered sugar a little at a time. Fold in 1 tablespoon of pineapple. Spread over crust.
Fold the remaining pineapple into the Cool Whip and evenly spread on top of cream cheese layer. Top with remaining ½ cup of graham cracker crumbs.
Refrigerate for 4-6 hours. Enjoy!
Notes
Drain pineapple in a colander for 5-10 minutes and press dry with paper towels.Avoid store bought graham cracker crumbs. Freshly crushed ones taste so much better!Thaw Cool Whip overnight in the fridge. Do not microwave or it may separate.
