Instructions
Line an 8x8 inch pan with aluminum foil and non stick cooking spray.
In a large microwave safe bowl, melt white chocolate chips and shortening; stirring frequently until smooth.
Stir in sweetened condensed milk, and mint extract.
Add green food coloring until you reach your desired color.
Cool slightly.
Fold in ~¾ cup of mini chips.
Evenly spread into prepared pan. Sprinkle remaining chips onto the top of the fudge.
Store in the refrigerator.
