My crock pot swamp potatoes feature smoky sausage, tender potatoes, and perfectly cooked green beans in a spicy Cajun sauce. This easy slow cooker recipe has everyone going back for seconds.

1CanCream of Chicken Soup10.5 Ounces
1CupLow Sodium Chicken Broth
1 ½TeaspoonsCajun SeasoningI Used Tony Chachere's

1 ½CupsCheddar CheeseFreshly Shredded
Instructions
Optional but highly encouraged: In a large skillet cook sausage until browned on all sides. Set aside. Sweat onion for 4-5 minutes. Add garlic and cook for one more minute.
Deglaze pan with chicken broth scraping up any browned bits.
Add smoked sausage, potatoes, onion/garlic mixture into slow cooker.
In a large bowl, combine cream of chicken soup, chicken broth from pan, Cajun seasoning, and salt/pepper.
Cook on low for 5-6 hours or on high for around 3 hours until potatoes are tender. Add green beans during the last 1-1 ½ hours of cooking.
Stir in the shredded cheese during the last 10 minutes of cooking and allow to melt. Enjoy!
Notes
If you prefer softer green beans you can add them at the beginning with the potatoes. You can substitute frozen green beans if fresh are out of season. Avoid canned unless you add them just before serving as they'll get mushy.
