Instructions
In a large microwave safe bowl, melt 6 ounces of the chocolate in 30 second increments stirring until you reach around 108 to to 113 degrees (114-118 for dark chocolate).
Then stir in 2 ounces of un-melted chocolate until the milk chocolate reaches 85 to 86 degrees. (Dark chocolate can be around 88 or 89).
Pour into molds and place in the fridge.
In a large pan melt butter. Pour in Kadaifi and cook until golden brown about 7-8 minutes. Cool slightly. Then stir in pistachio cream, tahini, and salt.
Once chocolate is firm, spread filling into molds leaving a border around the edges.
Repeat steps 1 and 2 with remaining chocolate. Pour into molds and smooth with an offset spatula. Refrigerate for 1-2 hours until set.
