Instructions
For the Dough
Preheat oven to 450 degrees F.
Combine yeast, sugar, and warm water. Allow to sit for 1-2 minutes.
Stir in salt and oil. Add flour a little at a time.
Knead for 4-6 minutes or until no longer sticky. Roll into a circle.
For the Pizza
In a large skillet, melt butter. Stir in garlic and shrimp and cook for around 1 minute per side.
Stir in lemon, and remove the shrimp. Pour sauce over the prepared crust.
Top with cheese and then shrimp. Bake for 14-16 minutes or until bubbly.

Ingredient Notes
Pizza Yeast: Pizza yeast (also called Instant Yeast) works immediately without any rise time. It also helps the dough stretch and hold its shape. Sugar: Don't leave this out; it helps activate the yeast.Flour: Scoop flour into your measuring cup with a spoon. Then, level off with a knife.
Dipping the cup into the flour canister often leads to using too much.
Water: Use warm but not hot water. It should feel like bathwater.
Shrimp: I used 15 medium frozen peeled and deveined shrimp. Smaller is better here as you want to be able to eat them in one bite.
Lemon Juice: Use fresh lemon juice. To get the most juice from your lemon roll, roll it on the counter and microwave it for 30 seconds.
Mozzarella Cheese: If possible, shred your own cheese. Preshredded blends contain anti-caking agents, which can lead to a grainy texture after melting.
Parmigiano Reggiano: Regular parm is a good substitute.
Tips
Activate Your Yeast: Allow your yeast to "eat" the sugar in the warm water for a few minutes. Don't add salt now, as it can kill off the yeast.
Cook your shrimp first. Raw shrimp should not be cooked on top of the pizza. Avoid overcooking, as they'll cook a bit more in the oven.
Crispy Crust: Bake on a pizza stone. If you don't have one, use a preheated sheet pan instead.
Place a pan on the rack below your pizza to catch any drippings or cheese that falls off.
Garnish: Garnish with fresh parsley, red pepper flakes, and a lemon wedge for squeezing.
