Instructions
Preheat oven to 350 degrees F.
In a large microwave safe bowl, heat butter until melted.
Stir in white sugar and brown sugar. Add egg, egg yolk, and vanilla.
Mix in espresso, baking soda, salt, cocoa powder, and flour until just combined.
Fold in chocolate chips and crushed candy canes.
Use a large cookie scoop to place dough balls onto a cookie sheet. Chill for 30-60 minutes.
Bake cookies for 10-12 minutes or until the edges are just set.
