In a large bowl, beat ricotta cheese and mascarpone until smooth.
Add vanilla. Stir in powdered sugar a little at a time until just combined.
Fold in chocolate chips.
Cover with plastic wrap and chill for 20-30 minutes before serving.

Marscapone: The rich flavor and creamy texture are perfect for this dip. If you can't find it at your store, you can use cream cheese. However, the flavor will be a little more tangy.
Ricotta: Use full fat ricotta. Drain it for a few hours to overnight by wrapping in cheesecloth and placing in a strainer over a bowl.
Tips
Keep ingredients chilled until you're ready to use them. The colder they are, the thicker they'll be.
Whip It Real Good: Don't panic if it looks thin. As you continue to mix, it will thicken up.
Fold chocolate chips gently to avoid deflating the air you worked so hard to incorporate. Toss with a bit of powdered sugar to prevent them from sinking.
