In a large dutch oven cook bacon until crisp. Remove with a slotted spoon, drain on paper towels.
Reserve one tablespoon of bacon grease. Heat to medium low. Cook onion in bacon grease for 5-7 minutes or until softened. Add garlic and cook for 1 more minute.
Stir in bacon.
Add in brown sugar, maple syrup, coffee, balsamic vinegar, and mustard. Cook for 25-30 minutes or until thickened.
For the Breakfast Burgers
In a large bowl combine ground beef, salt, pepper, and Worcestershire sauce.Form into 6 even patties.
Heat grill pan or skillet over medium high heat. Cook burgers for 3-5 minutes per side, or until you reach your desired level of doneness. Top with cheese, Cover with foil and cook for an additional 1-2 minutes.
While cheese is melting fry eggs.
Spread bottom buns with ketchup. Top with burger,lettuce and ,red onion. Top that with fried egg.
Spread bacon jam over the top bun halves. Squish and enjoy!
