Basil, Parsley, and more Parmesan If Desired, For Garnish
Instructions
In a large mixing bowl, combine ground chicken, egg, panko, Italian seasoning, garlic powder, salt, pepper, and parmesan. Mix until just combined.
Use a 1 or 2-inch cookie scoop to form into meatballs.
Heat sun-dried tomato oil in a large skillet over medium-high heat. Add meatballs and cook for 5 minutes, or until they are golden brown on all sides. Remove the meatballs and set aside. It's okay if they're not fully cooked through yet.
Add 1 tablespoon of butter to the skillet. Once melted, add garlic, Italian seasoning, red pepper flakes, and drained sun-dried tomatoes. Cook for around 1 minute.
Add broth scrapping the bottom of the pan as you go. white wine vinegar, heavy cream, and parmesan. Reduce heat to medium-low.
Add the meatballs back to the pan and simmer for 10-15 minutes, or until the meatballs are cooked through to 165°F.
Spoon the sauce over the meatballs and garnish with basil, parsley, and more parmesan, if desired. Enjoy!
