For The Burger Patty

  • 1 Pound Ground Beef I used 80/20
  • 1/4 Medium Sweet Onion Finely Diced
  • 2 Garlic Cloves Minced
  • 1/2 Teaspoon Cumin
  • 1/4 Teaspoon Chipotle Chili Powder
  • Salt and Pepper To Taste

For The Quesadilla Burger

  • 4 Flour Tortillas
  • 1 Cup Mexican Shredded Cheese
  • 1/4 Cup Canned Corn Drained
  • 1 Jalapeno Pepper Seeded and Thinly Sliced
  • 1 Tomato Sliced
  • 1/2 Avocado Sliced

For the Chipotle Ranch


For The Burger Patty

  • In a medium bowl, combine ground beef, onion, garlic, cumin, chipotle chili powder, and salt/pepper.
  • Grease skillet ,and heat over medium high heat.
  • Cook until burgers are your desired level of doneness. Drain grease.
  • Add four flour tortillas to the skillet, and top with cheese. Cook over medium high heat until tortillas are crispy and cheese is melted.
  • Add corn and burger to 2 of the tortillas. Top with tomato, avocado, and jalapeno peppers.
  • In a small bowl combine ranch dressing, chili powder, paprika, and salt/pepper. Drizzle over burger. Top with remaining tortillas.
