Breakfast Quesadilla

Breakfast Quesadilla: Fluffy scrambled eggs and savory ham inside an ultra crispy tortilla. Perfect for busy mornings and freezer friendly!

  • 1 Package Smithfield Anytime Favorites Cubed Ham
  • 1 Sweet Onion Diced
  • 1 Green Bell Pepper Diced
  • 6 Large Eggs
  • 1 Cup Cheddar Cheese
  • 4 Tablespoons of Butter Divided
  • 8 8 Inch Tortillas
  • Salt/Pepper To Taste


  • In a large skillet melt 2 tablespoons of butter over medium heat. Cook onion, and bell pepper until tender.
  • Add in ham and cook until heated through. Pour into a bowl and set aside.
  • In the same skillet, heat 1 tablespoon of butter over low heat. Crack eggs one at a time into a large bowl. Add salt and pepper. Whisk well.
  • Scramble eggs until set. Pour into a bowl and set aside.
  • In the same skillet, heat butter over medium high heat. Place tortilla in the skillet. Fill with veggie/ham mixture, and eggs. Top with another tortilla.
  • Cook 2-3 minutes per side or until golden brown.
  • Repeat with remaining ingredients.
  • Serve with salsa if desired.
