Breakfast Quesadilla: Fluffy scrambled eggs and savory ham inside an ultra crispy tortilla. Perfect for busy mornings and freezer friendly!
- 1 Package Smithfield Anytime Favorites Cubed Ham
- 1 Sweet Onion, Diced
- 1 Green Bell Pepper, Diced
- 6 Large Eggs
- 1 Cup Cheddar Cheese
- 4 Tablespoons of Butter, Divided
- 8 8 Inch Tortillas
- Salt/Pepper, To Taste
In a large skillet melt 2 tablespoons of butter over medium heat. Cook onion, and bell pepper until tender.
Add in ham and cook until heated through. Pour into a bowl and set aside.
In the same skillet, heat 1 tablespoon of butter over low heat. Crack eggs one at a time into a large bowl. Add salt and pepper. Whisk well.
Scramble eggs until set. Pour into a bowl and set aside.
In the same skillet, heat butter over medium high heat. Place tortilla in the skillet. Fill with veggie/ham mixture, and eggs. Top with another tortilla.
Cook 2-3 minutes per side or until golden brown.
Repeat with remaining ingredients.
Serve with salsa if desired.
