Cheesy Texas Trash Dip
My Texas trash dip is full of my favorite Tex-Mex flavors and is very easy to make. Guests always rave about this when I make it for parties.

I love making this Texas Trash Dip when watching football. It's also a great side alongside dishes like my cheese taco shells , Mexican steak fries, or elotes. It is so addicting, once you start you can't stop eating it. It's super simple and always a big hit with party guests. The Texas in the name refers to the bold southwestern flavors. While the trash portion refers to just throwing in whatever you have on hand.
Bonus: As written, this recipe is also gluten-free and vegetarian. Always be sure to check your ingredients, though, as sources can change.
Ingredient Notes and Shopping Tips
- Cream Cheese: To quickly soften cream cheese submerge it in its foil packing in warm (not hot) water for 3-5 minutes.
- You can also microwave it in 20-30-second intervals as well.
- Refried Beans: I like using the vegetarian variety.
- Canned Beans: Be sure to rinse and drain all canned beans using a strainer. This will help remove excess salt and improve the flavor as well.
- Taco Seasoning: I used store-bought taco seasoning in this recipe. Feel free to substitute your favorite homemade variety, I'm partial to this one.
- Shredded Cheese: Shred your own cheese for the smoothest melt. Storebought versions often contain ingredients like cornstarch to ensure it doesn't stick together which can lead to a grainy texture.
How To Make Texas Trash Dip
- Preheat oven and grease pan.
- Mix cream cheese, and sour cream. Stir in beans, corn, olives, chilies, taco seasoning, and half of the cheese.
- Top with remaining cheese and bake until bubbly.

We can't eat corn in any form, but have learned to substitute tiny diced yellow squash instead in most recipes. We call them "squash niblets"! It was delicious!!
Use Siete' brand tortilla chips (non-grain, made in Houston!) for dipping.
Thanks for sharing your substitutions with us RC!
