Texas Sheet Cake Cookies
My Texas sheet cake cookies are SO soft and topped with a fudgy chocolate frosting. These cookies taste like Texas sheet cake in cookie form and only require a handful of ingredients.

I LOVE cookies. Some of my all-time favorites are coffee cookies, buckeye cookies, homemade thin mints, and PB & J cookies. However, these Texas Sheet Cake Cookies are my favorite yet. They start with a box mix and require hardly any effort. But beware - these are totally addictive. Every time I walk past the cookie plate, I find myself reaching out and grabbing one to eat!
Their name comes from the fact that they're so rich they could feed the whole state of Texas! These are great for chocolate cravings, potlucks, and parties. They're also super fun to make with kids!
Ingredient Notes and Shopping Tips

- Cake Mix: Use whatever brand you prefer. I'm partial to Betty Crocker's Triple Chocolate.
- Eggs: Bring to room temperature to help everything incorporate smoothly.
- Oil: Canola or vegetable oil will work fine.
- Cocoa Powder: You can use natural or Dutch-processed cocoa powder in this recipe, as we're only using it for the frosting. I used Ghiradelli's unsweetened cocoa powder.
How To Make Texas Sheet Cake Cookies

- Prep work: Preheat oven, and line pan.
- Cookie Batter: Combine all ingredients. Drop onto prepared pan using an ice cream scoop.
- Frosting: Melt butter and add cocoa powder. Stir in powdered sugar.
- Frost cooled cookies and enjoy!
Microwave Frosting Option
You can also make this frosting in the microwave if you prefer. Melt your butter for about 1 minute in a microwave-safe bowl. Then, continue to follow the recipe as written.

- Line your cookie sheets with parchment paper or nonstick tin foil. This will prevent your cookies from sticking and make clean-up a breeze.
- Use a cookie scoop for uniform cookies that will bake at the same rate.
- Frosting: Spread frosting evenly using a rubber or offset spatula. We also like to frost on a wire rack with wax paper below it to catch any drips.
- Add Nuts: Sprinkle walnuts and chopped pecans on top of the frosting for a fun garnish.
Don't Panic if the batter is thick
Since we're leaving out the water typically called for in a cake mix, the dough will be thicker. This is normal.
❓Frequently Asked Questions❓
It can be hard to tell with cakey cookies are done. I like to insert a toothpick in the center of these.
If it comes out with batter keep baking for a few minutes at a time.
If the toothpick only has a few crumbs, your cookies are done.
It's okay if the centers look a little underbaked they'll continue to firm up as they cool.

Ingredients
For the Cookies
- 1 Box Chocolate Cake Mix
- 2 Eggs
- ⅓ Cup Canola Oil
For the Chocolate Frosting
- ½ Cup Butter
- 2 Tablespoons Cocoa Powder
- 2 Tablespoons Heavy Cream
- 2 Cups Powdered Sugar
Instructions
For the Cookies
- Preheat oven to 350 degrees F. Line cookie sheets (I like these ones) with parchment paper, or non stick tin foil.
- In a large bowl, combine all cookie ingredients. Drop onto prepared pans using an ice cream scoop(I used this one).
- Bake for 8-10 minutes. Cool on cookie sheet for 3 minutes. Remove to wire racks to cool completely.
For the Frosting
- In a medium saucepan, melt butter over medium-low heat. Stir in cocoa powder.
- Remove from heat. Then stir in powdered sugar a little at a time. Add heavy cream as needed to reach your desired consistency.
