Slow Cooker Sweet Potato Casserole
My slow cooker sweet potato casserole has flavorful and cream sweet potatoes topped with candied nuts and gooey marshmallows. Free up your oven for the turkey and rolls with this side dish everyone fights over.

For Thanksgiving I love to make side dishes like Instant Pot mashed potatoes and homemade green bean casserole. Another side dish I'm famous for is my crock pot sweet potato casserole. Everyone always asks for seconds! Best of all the slow cooker does most of the work so you can focus on the rest of your dishes or family!
Why This Recipe Works: A Sprinkle of Food Science
- Low and Slow Heat= Sweeter Potatoes: Low heat converts their starch to sugar which makes them taste sweeter without extra added sugar.
- Easy To Cut Sweet Potatoes: Microwaving for a few minutes makes these hard tubers way easier to cut.
- Tempered Eggs: Adding a small amount of warm cream to the eggs heats them gradually and prevents scrambling.
Ingredient Notes and Shopping Tips

- Sweet Potatoes: Be sure to grab sweet potatoes and not yams. They can be hard to cut through so I like to pop mine in the microwave for 2-3 minutes to soften slightly before dicing. Avoid canned varieties which are already sweetened.
- Heavy Cream: This adds richness without thinning it out. You could get away with half and half but do not use milk.
- Pecans: If you are nut free, oats or pumpkin seeds make a good substitute!

- Dice As Evenly As You Can: This will help them cook at the same rate.
- Drain Well: After cooking the sweet potatoes drain well and return the empty to crock pot pot to allow extra water to evaporate to avoid a soupy casserole.
- Don't Skip Tempering the Eggs: We want a smooth custard like texture not scrambled eggs.
- Broil Carefully: Keep a close eye on them as they can go from uncooked to burnt in minutes!

Best Slow Cooker Sweet Potato Casserole

Ingredients
For the Sweet Potatoes
- 3-4 Pounds Sweet Potatoes Peeled and Diced, Around 4-5 Large Potatoes
- 1 Cup Water
- 2 Eggs
- 2 Teaspoons Vanilla
- ½ Cup Butter Melted
- 1 Cup Brown Sugar Packed
- 2-3 Teaspoons Salt To Taste
- ½ Cup Heavy Cream Warmed
For the Topping
- ½ Cup Brown Sugar
- ⅓ Cup Flour
- ⅓ Cup Butter Melted
- 1 Cup Pecans Chopped
- 4 Cups Mini Marshmallows
Instructions
- Place water and sweet potatoes into slow cooker. Cook on high for 4-4 ½ hours. Drain.
- Return to slow cooker. Allow to sit for a few minutes and then mash. Whisk eggs in a bowl and gradually pour warm cream in a little a time.. Add to sweet potatoes and stir in vanilla, butter, brown sugar, and salt.
- In a small small bowl combine brown sugar, flour, butter, and pecans. Sprinkle evenly over sweet potatoes.
- Cook on high for 2-3 hours.
- Top with marshmallows. If desired, pour into a greased 9x13 pan and broil for 2-3 minutes or until golden brown. You can also use a kitchen torch if desired.
