Sweet marshmallow frosting sandwiched between velvety soft cake like cookies.
Ever since I was first allowed to purchase Whoopie Pies at the grocery store bakery, I have been hooked! They are like mini delicious cakes with a pillowy soft marshmallow frosting. They are totally poppable. One will never be enough!
I jazzed these up for the fourth of July. I highly recommend using gel dyes to get the brightest color. This is especially true for red as typical food coloring usually gives a dark pink at best.

I can’t wait to make these for 4th of July! My only problem is that I don’t think I’ll have time to make the whole recipe before the picnic. What is the best way to make them ahead of time? Bake and freeze in advance (cookie only, or whole thing)? Or will they store well for a day or two? Thanks!

Ach just caught this in the spam folder! 🙁 Hope you enjoyed!
In case anyone else has the same question: I wouldn’t freeze the frosting, but the cookies would be fine in an air tight container with wax paper between the layers.
