Every summer there are 234242 things I want to do with fresh sweet corn. However, I never really end up doing much of anything with it because it tastes so darn good just off the cob.
I love corn on the cob so much that I cried when I lost my front teeth and couldn’t enjoy it. It’s just not the same cut off the cob am I right?
The summer I lost my front teeth, I forbade my family from eating corn on the cob!! However, I vowed this summer was not going to end without me trying out a new corn recipe.
The spicy rub combined with the sweet corn is a wonderful contrast.
If you’re reading this recipe out of season feel free to substitute frozen corn.
Parmesan Chipotle Corn
Ingredients
- 12 Ears of Sweet Corn Shucked
- 1 Tablespoon Kosher Salt
- 3 Tablespoons Parmesan Cheese Grated
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Black Pepper
- 1 Teaspoon Chipotle Chili Powder
- 1 Teaspoon Minced Onion
- ½ Teaspoon Parsley Flakes
- Butter Softened
Instructions
- Bring a pot of salted water to a rolling boil. Cook corn for 4-6 minutes or until nothing squirts out when poked with a fork.
- Mix all ingredients except butter together in a small bowl until combined. Pour into a shaker (an old Parmesan cheese container works well).
- When corn is done, brush generously with butter. Sprinkle with the desired amount of seasoning.
