Beignets also called french fritters are doughnuts made with yeast. The choux pastry also uses fewer eggs which leads to a light and airy texture.  Rolling out the dough also leads to wonderful air pockets, and a melt-in-your-mouth feel.

These Mickey-shaped beignets start with a standard beignet dough that is shaped using a cookie cutter. Then they're fried in oil, and topped with powdered sugar.

Ingredient Notes

  • Warm Water: Use lukewarm, not hot water to avoid killing off the yeast.
  • Yeast: If you don't work with yeast often, make sure your yeast is not expired for best results.
  • Powdered Sugar: I like topping with powdered sugar, but you could also use caramel sauce or chocolate sauce instead.
  • Oil: Use vegetable oil or another neutral oiling for frying.

How To Make Mickey Beignets

  1. Proof yeast: Combine yeast and warm water.
  2. Make Dough: Combine milk, vanilla, egg, and salt. Add in yeast mixture.
  3. Alternate adding flour and butter.
  4. Knead: Knead the dough for 2 minutes.
  5. Rise: Allow to rise for 2 hours.
  6. Roll Out: Roll out dough and cut shapes using a cookie cutter.
  7. Fry: Fry for 2-3 minutes per side.

Tips and Tricks

  1. If you don't want to make them look like Mickey, you could use any cookie cutter of your choice. You can also cut the dough using a pizza cutter for standard square beignets.
  2. Don't over-mix the dough. You want a light airy doughnut, not a tough chewy one.
  3. Use a candy or deep-fry thermometer to ensure your oil is at the correct temperature.
  4. Don't overcrowd your pan. Fry only a few at a time. Overcrowding the oil will lead to a soggy fritter.
  5. Keep beignets in the oven on the keep warm setting while you fry the remaining dough.

Storage

Beignets are best enjoyed the day you make them. However, if you can't eat them all right away store in an airtight container for up to 2 days.

Making the Dough Ahead

The dough can be made ahead and stored in the fridge for up to 3 days. Cover with plastic wrap, and punch it down every time it rises.

Freezing Dough

You can freeze beignets that have been cut using a cookie cutter. Place on a cookie sheet for around one hour until frozen. Then place in a freezer bag for up to 2 months. Thaw before frying.

Freezing Fried Beignets

You can also freeze beignets for up to 2 months once fried, however, they may not taste quite as good.

Mickey Beignets

Ingredients

  • ¾ Cup Warm Water
  • .25 Ounces Active Dry Yeast
  • ½ Cup Evaporated Milk
  • Cup White Sugar
  • 1 Pinch Salt
  • 1 Egg
  • 1 Teaspoon Vanilla
  • 4 Cups Flour
  • 3 Tablespoons Butter Melted
  • Canola Oil For Frying

Instructions

  • In a small bowl, combine the warm water and yeast. Allow to sit for 3-5 minutes.
  • In a large bowl, combine evaporated milk, sugar, salt, and vanilla. Stir in egg.
  • Add milk mixture to yeast mixture.
  • Add in half of the flour a little at a time. Then add in melted butter.
  • Next, mix in the remaining flour.
  • Knead on a lightly floured service for 2-3 minutes.
  • Place dough into a greased bowl and cover with a kitchen towel.
  • Allow to rise for 2 hours or until doubled in size.
  • Punch the dough down in the bowl, and roll out onto a floured surface until it is around ¼ inch thick.
  • Cut out shapes using a Mickey Mouse cookie cutter. Allow to rest for 5-10 minutes.
  • Preheat oil to 350 degrees F in a deep pot. Fry for 2-3 minutes per side, or until golden brown.
  • Drain on paper towels, and dust with powdered sugar.

    Easy enough to follow along for a newbie like me, took a couple tries to get them right but I was able to fry a couple and they came out SO GOOD. They're so soft and pillowy, and pair great with caramel sauce. Definitely making them again!
