Hot Chocolate and Marshmallow Thumbprint Cookies: Soft and chewy chocolate cookies with a creamy marshmallow center. As warm and comforting as a big cup of hot cocoa!

Hot Chocolate and Marshmallow Thumbprint Cookies

Hot Chocolate is one of my favorite things to enjoy on cold winter nights! Looking for a snack to go right along with it or your morning coffee? You’ve got to try these Hot Chocolate and Marshmallow Thumbprint Cookies!

 

They have a rich, chocolate flavor.  And we all know hot chocolate is not complete without marshmallows or in this case marshmallow cream! I’d argue it’s even better than marshmallows as it will stay soft for a few days or while sitting out on cookie trays. A sweet dollop of marshmallow frosting completes the cookie!

Word on the street is that even Santa can’t resist these cookies so be sure to leave him one (Or three!).

Ingredients

For the Cookies

  • ½ Cup Butter Softened
  • ⅔ Cup White Sugar
  • 1 Egg
  • 2 Tablespoons Whole Milk
  • 2 Teaspoons Vanilla Extract
  • 1 Cup All Purpose Flour
  • ⅓ Cup Cocoa Powder
  • Pinch of Salt to Taste

For the Marshmallow Frosting

  • ½ Cup Butter Softened
  • 1 Cup Powdered Sugar
  • 3 ½ Ounces Marshmallow Creme
  • 1 Teaspoon Vanilla Extract

Instructions

For the Cookies

  • In a large bowl, cream butter and sugar together.
  • Stir in milk, egg, cocoa powder and vanilla extract.
  • Gradually add flour a little a time a time until just combined. Do not over mix.
  • Cover bowl with plastic wrap and refrigerate for 1-2 hours.
  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Form dough into ~1 inch balls. Make an indentation with your thumb in the center of each cookie.
  • Bake for 10-12 minutes or until the center is just set. Cool completely.

For the Marshmallow Frosting

  • Cream butter and vanilla until light and fluffy.
  • Gradually add in powdered sugar a little at a time. Fold in marshmallow cream.
  • Pipe or spoon into the center of the cookie.

    What will happen if I use 1%. Low fat milk instead of whole milk in the hot chocolate thumbprint cookies?

      Hi Teri,
      It’s just 2 tablespoons so you should be fine with 1% milk
