French Toast Casserole With Cinnamon Rolls
My cinnamon French toast casserole is gooey, rich and topped with a decadent cream cheese frosting. This easy dump and bake dish is perfect for holiday brunch!

Warm breakfasts are a must for a chilly Fall morning. We love making Mexican breakfast casserole, ham hashbrown casserole or my breakfast burger. When I want something sweet this cinnamon French toast casserole is my go to! We use cinnamon rolls for the bread which makes this super easy. The edges get a little crispy but the center stays nice and gooey. You can even prep it the night before!
Ingredient Notes and Shopping Tips

- Cinnamon Rolls: Grab the regular not Grands variety. Set aside the icing cup we will use t later!
- Milk: I like milk over cream as it absorbs well into the soft rolls and isn't too much. Use half and half for a more decadent casserole. Absorbs more easily into soft breads (like Pillsbury rolls), so it bakes through evenly.
- Cream Cheese: Soften cream cheese at room temp. while your casserole bakes. Forgot? You can dunk the foil packet in warm water for a few minutes.

- Cut Evenly: I cut rolls into around 6-8 pieces each. This helps them bake evenly with no dry or wet spots.
- Perfect Doneness: Bake until a fork or toothpick inserted near the center comes out clean. Its okay if the center looks a tad underbaked it will firm up in the hot pan as it cools.
Yes! I actually like it better this way as it really soaks up the flavor. Assemble the night before and stick in the fridge. Bring to room temperature for 20-30 minutes prior to baking.

Ingredients
For the Casserole
- 2 17.5 Ounce Cans Refrigerated Cinnamon Rolls
- 2 Tablespoons Butter Melted
- 4 Eggs
- ⅓ Cup Whole Milk
- 1 Tablespoon Cinnamon
- 1 Teaspoon Vanilla
For the Icing
- 2 Packages Reserved Icing From The Cinnamon Roll Package
- ½ Cup Powdered Sugar
- 2 Tablespoons Cream Cheese Softened
- 1 Tablespoon Whole Milk
Instructions
For the Casserole
- Preheat oven to 350 degrees F. Grease 9x13 pan with melted butter.
- Cut cinnamon rolls into sixths. Evenly spread into prepared pan.
- In a medium bowl, whisk eggs, milk, cinnamon, and vanilla until well combined. Pour over cinnamon rolls.
- Bake for 30-35 minutes or until golden brown.
For the Icing
- In a medium bowl, combine cinnamon roll icing, powdered sugar, cream cheese, and milk until smooth.
- Evenly pour over casserole.
