Such as:

  1. Reading that mile high stack of magazine subscriptions. I’ll do it later when I have “free time”. Seriously guys I’m so behind, Taylor Swift is still dating Calvin Harris!
  2. Folding laundry: I’ll just turn the dryer on for the third time, and pretend the clothes aren’t dry. Please tell me someone else does this?! Anyone?!
  3. Making a grocery list: Haha just kidding I’ll just backtrack 2342 times and look like a moron.

One thing I thought about a lot this summer was making Strawberry  lemonade. I didn’t want to make a whole pitcher for 2 people, and I just never got around to it. (Somehow we did get around to strawberry daiquiris, frozen strawberry margaritas, and strawberry mimosas though). Priorities! But, I’m not here to make excuses I’m here to make CHANGES!

I can still enjoy the tangy lemon and sweet strawberry flavor in these Strawberry Lemonade cupcakes.

Strawberry Lemonade Cupcakes: Tangy lemon cupcakes topped with a creamy strawberry buttercream. Your favorite summer drink, in cupcake form!
Ingredients
  • For the Lemonade Cupcakes
  • 1 Box White Cake Mix
  • ⅓ Cup Butter, Melted
  • 3 Eggs
  • Zest of 2 Lemons
  • ¼ Cup Lemon Juice, Freshly Squeezed
  • 1 Cup Sour Cream
  • ½ Cup Whole Milk
  • For the Strawberry Lemonade Frosting
  • 1 Cup Butter, Softened
  • 1 Teaspoon Vanilla Extract
  • 2 Teaspoons Lemon Juice, Freshly Squeezed
  • 4 Tablespoons Strawberry Jam
  • 3-4 Cups Powdered Sugar
Instructions
  1. For the Lemonade Cupcakes
  2. Preheat oven to 350 degrees F. Line a cupcake pan with paper liners.
  3. In a large bowl, combine all cupcake ingredients. Stir until smooth and well combined.
  4. Fill cupcake liners ~2/3 of the way full. Bake for 17-20 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
  5. For the Strawberry Lemonade Frosting
  6. In a large bowl, cream butter until light and fluffy. Stir in vanilla, lemon juice, and strawberry jam.
  7. Gradually add powdered sugar a little at a time. Add milk as needed to reach your desired consistency.
  8. Spread or pipe onto cupcakes. Garnish with slice strawberries, if desired.

Strawberry Lemonade Cupcakes Tip:

  1. Microwave lemons for 15-20 seconds, to make them much easier to juice.

Starbucks Pink Drink Recipe: This creamy fruity drink tastes just like a pink starburst! The cutest and most refreshing summer drink ever!
Ingredients
  • 12 Large Strawberries, Hulled
  • 1½ Tablesppons Granulated Sugar
  • ¾ Cup Acai Green Tea, Chilled
  • 1 Cup Ice Cubes
  • ¾ Cup Coconut Milk
Instructions
  1. Place 8 strawberries, sugar, chilled tea ,and ice in a blender. Blend until smooth.
  2. Divide drink between 2 large glasses. Top with coconut milk.
  3. Garnish with remaining strawberries if desired.

Since my family is roasting me by keeping it at a sweltering 76 in here, I’ve got no choice but to make cold drinks.

These Frozen Strawberry Margaritas are so refreshing! Frosty and icy, with just the right amount of sweetness. Writing this blog post, I just want to slurp these all over again.

And with only 5 ingredients, and 5 minutes prep I just might!

Frozen Strawberry Margaritas: Frosty and sweet strawberry margaritas that are amazingly refreshing. Only 5 ingredients and 5 minutes from blender to your lips!
Ingredients
  • 3½ Cups Fresh Strawberries
  • 1½ Cups Ice Cubes
  • ½ Cup Tequila
  • ¼ Cup Triple Sec
  • ½ Cup Lime Juice, Freshly Squeezed
  • ¼ Cup White Sugar
  • Coarse Salt or Sugar, For the Rim If Desired
  • Sliced Limes or Strawberries, For Garnish, If Desired
Instructions
  1. Place strawberries, ice cubes, tequila, triple sec, sugar, and lime juice into the blender. Blend until you reach your desired consistency.
  2. Wipe extra juice juice around the rum of glasses. Dip into sugar or salt.
  3. Garnish with lime or strawberry slices if desired.
  4. Pour evenly into glasses and enjoy responsibly!

  1. I used fresh strawberries because they’re in season. However, frozen would also work well!

Easy Nutella Cupcakes with Nutella Buttercream: Rich chocolate cupcakes topped a creamy dreamy Nutella buttercream. If you like Nutella you'll love these cupcakes!
Ingredients
  • For the Easy Nutella Cupcakes
  • 1⅔ Cups All Purpose Flour
  • 1 Cup Granulated Sugar
  • ¼ Teaspoons Baking Soda
  • 1 Teaspoon Baking Powder
  • ¾ Cup Butter, Softened
  • ½ Cup Nutella
  • 3 Egg Whites
  • 2 Teaspoons Vanilla Extract
  • ½ Cup Sour Cream
  • ½ Cup Whole Milk
  • Pinch of Salt, To Taste
  • For the Nutella Buttercream
  • 1 Cup Butter, Softened
  • 4 Cups Powdered Sugar
  • ½ Cup Nutella
  • 2 Tablespoons Whole Milk
  • 2 Teaspoons Vanilla extract
  • Salt, To Taste
  • Additional Nutella and Strawberries, If Desired
Instructions
  1. Preheat oven to 350 degrees F. Line a cupcake tin with paper liners.
  2. In a large bowl whisk flour, sugar, baking soda, baking powder, and salt together.
  3. Stir in butter, Nutella, egg whites, milk, sour cream, and vanilla until smooth.
  4. Fill cupcake liners around ¾ of the way full. Bake for 19-21 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool in pan for 3-4 minutes. Remove to wire rack to cool completely.
  6. For the Nutella Buttercream
  7. Cream butter until light and fluffy. Stir in Nutella, vanilla, and salt.
  8. Gradually add powdered sugar a little a time until just combined. Add milk as needed to reach your desired consistency.
  9. Pipe or spread Nutella buttercream onto cupcakes.
  10. If desired: heat Nutella in the microwave for 30-60 seconds. Drizzle over cupcakes. Top with strawberry slices.

This strawberry poke cake is SO easy! It starts out with a white cake mix.

Then the cake is flavored with strawberries and CHEESECAKE flavored pudding (Ah-mazing!).  No one will ever guess this moist flavorful strawberry poke cake started out with a box mix!

It’s red color would make it a perfect Valentine’s Day or Christmas dessert. It has to set up in the fridge for an hour or so, so it’s a cinch to make ahead!

Skip the overpriced chocolate covered strawberries and try this strawberry poke cake instead!

Ingredients
  • 1 Box White Cake Mix
  • 1 Cup Boiling Water
  • 1 Package of Strawberry Jello
  • ½ Cup Cold Water
  • ½ Cup Frozen Strawberries in Sugar
  • 1 Large Box Cheesecake Pudding Mix
  • 2 Cups Whole Milk
  • 12 Ounces Cool Whip
Instructions
  1. Preheat oven to 350 degrees F.
  2. Prepare the cake according to package directions.
  3. Grease a 9x13 inch baking dish. Evenly spread batter into prepared pan.
  4. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
  5. Poke holes in the top of the cake using a wooden skewer or the back of a wooden spoon.
  6. In a small bowl, combine jello and boiling water. Stir until dissolved.
  7. Then stir in cold water.
  8. Evenly pour over cake.Refrigerate for 1 hour.
  9. In a large bowl, whisk mil and pudding mix until smooth. Fold in strawberries.
  10. Pour pudding evenly over cake. Refrigerate for ~1 hour.
  11. Top with Cool Whip. Garnish with additional strawberries if desired.
  12. Store in the refrigerator.

Strawberry Mimosa Recipe: Easy make ahead Strawberry Mimosas that only require 6 ingredients. Perfect for Valentine's Day breakfast or brunch!
Ingredients
  • 12 Ounces Raspberries, Frozen
  • ½ Cup Strawberries, Frozen
  • 2 Tablespoons White Sugar, To Taste
  • 1 Cup Half and Half
  • ½ Teaspoon Vanilla Extract
  • 1-2 Bottles Champagne (or 1-2 Liters of Soda like Ginger Ale, Sprite, or 7 Up)
  • Strawberries For Garnish, If Desired
Instructions
  1. In a medium sauce pan, combine raspberries, and diced strawberries. Heat over low/medium heat until soft (~8-10 minutes).
  2. Add sugar to taste.
  3. Cook for another 5-7 minutes stirring frequently. Cool for ~5 minutes.
  4. Blend or puree. Strain.
  5. Return to sauce pan. Add cream and vanilla. Stir until combined. Pour into an ice cube tray. Freeze for 4-6 hours.
  6. Pour champagne into champagne flutes (about ½ way full). Add 3-4 ice cubes to each glass.
  7. Garnish with additional strawberries if desired.
