The cupcakes are made from scratch and include actual eggnog in the batter. The eggnog adds the most amazing flavor AND tons of moisture for a light pillowy cupcake.

Then they’re topped with a rich frosting that also contains eggnog with just a hint of warming nutmeg.

Homemade Eggnog Cupcakes:Moist eggnog cupcakes topped with a decadent eggnog buttercream. Your favorite holiday drink in cupcake form!
Ingredients
  • For the Eggnog Cupcakes
  • 1⅔ Cups All Purpose Flour
  • 1 Cup White Sugar
  • 1¼ Teaspoons of Baking Soda
  • ¾ Cup Butter, Softened
  • 3 Egg Whites
  • 1 Teaspoon Vanilla Extract
  • ½ Teaspoon Nutmeg, To Taste
  • ¾ Cup Eggnog (I used store bought)
  • ¼ Cup Milk
  • For the Eggnog Frosting
  • ½ Cup Butter, Softened
  • ½ Cup Shortening
  • 3-4 Cups of Powdered Sugar
  • 4 Tablespoons Eggnog
  • ¼ Teaspoon of Rum Extract
  • 1 Teaspoon Nutmeg
Instructions
  1. For the Eggnog Cupcakes
  2. Preheat oven to 350 degrees F. Line a cupcake pan with paper liners.
  3. In a large bowl, combine butter,sugar egg whites, eggnog, milk, vanilla, and nutmeg.
  4. Stir in baking powder and flour a little at a time until just combined. Do not over mix.
  5. Fill cupcakes liners ~3/4 of the way full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center of the cupcake comes out clean.
  7. Cool in pan for 3-4 minutes. Remove to wire racks to cool completely before frosting.
  8. For the Eggnog Frosting
  9. In a large bowl, combine butter and shortening.
  10. Stir in eggnog, rum extract, and nutmeg.
  11. Gradually add powdered sugar a little at a time until you reach your desired consistency. Add more eggnog if icing is too thick.
  12. Spread or pipe frosting onto your eggnog cupcakes.
