  • For the Sugar Cookie Crust:
  • ½ Cup Butter, Softened
  • ½ Cup White Sugar
  • 1 Egg
  • 1 Tsp Vanilla
  • 1 Tsp Baking Soda
  • 1 Tsp Salt
  • 1 ¼ Cup Flour
  • ¼ Cup Rainbow Sprinkles
  • For the Cheesecake
  • Cheesecake Layer
  • 4 (8 oz) Bricks Cream Cheese, Slightly Softened
  • ¾ Cup Granulated Sugar
  • ¾ Cup Yellow Cake Mix
  • 2 Tsp Vanilla
  • 4 Eggs
Instructions
  1. Preheat oven to 325° F.
  2. For the Cookie Crust:
  3. Spray a 9" cake pan with non stick cooking spray. Set aside.
  4. Beat butter and sugar together until light and fluffy.
  5. Stir in egg, vanilla, baking soda, and salt.
  6. Gradually add flour a little at a time, stirring until just combined. Fold in sprinkles.
  7. Press cookie dough into bottom of cake pan.
  8. For the Cheesecake Filling
  9. In a large mixing bowl stir cream cheese and sugar together until smooth.
  10. Stir in cake mix, vanilla, and eggs.
  11. Pour over crust.
  12. Bake for 55-60 minutes or until the center is nearly set.
  13. Cool for 4-6 hours in the refrigerator. Top with whipped cream, sprinkles, or cookies if desired!
