Manhattan Clam Chowder: Tender clams and hearty vegetables in a flavorful tomato broth. This easy soup is comforting and healthier than its New England counterpart.
Ingredients
  • 4 Slices Thick Cut Bacon, Chopped into ~1/4 Inch Pieces
  • 1 Sweet Onion, Diced
  • 1 Red Bell Pepper, Diced
  • 1 Carrot, Diced
  • 1 Stalk Celery, Diced
  • 4 Cloves of Garlic, Minced
  • 1 Teaspoon Oregano, Dried
  • ½ Cup Dry White Wine
  • 3 (8-ounce) Bottles Clam Juice
  • 5 (6½-ounce) Cans Chopped Clams, Drained Juice Reserved
  • 1½ Pounds Yukon Gold Potatoes,Peeled and Diced in ~1/4 Inch Pieces
  • 1 Bay Leaf
  • 1 (28 Ounce) Can Diced Tomatoes
  • 2 Tablespoons Fresh Parsley, Roughly Chopped
Instructions
  1. In a large Dutch Oven, fry bacon until crispy (~7 minutes).
  2. Add onion, pepper, carrot, and celery to bacon grease. Cook for 10-12 minutes or until softened. Add in garlic and oregano and cook for 1 more minute.
  3. Pour in wine. Increase heat to high, bring to a boil. Continue until it reduces by about half (~2-3 minutes). Pour in clam juice, reserved clam juices, potatoes, and bay leaf.
  4. Bring to boil, reduce to simmer. Simmer for ~8-10 minutes or until the potatoes are tender.
  5. Pour in diced tomatoes, cook for ~5 more minutes.
  6. Discard bayleaf. Remove from heat and stir in clams. Season with salt and pepper to taste.
  7. Garnish with parsley if desired.

  1. You can find Clam juice near the canned fish/tuna pouches at your grocery store.
  2. I like using Chicken of the Sea’s chopped clams in this recipe.

This tomato based broth was originally made by Portuguese immigrants in Rhode Island.

I like eating my stew with big slices of crusty bread. I took that one step further and made a cheesy crunchy baguette crouton. It is supposed to be made with Irish cheddar but I couldn’t find it at my small town grocery store so I just used mozzarella. (Shhh Don’t tell!)

I like making this on lazy days on the stove top but it also works great in the crockpot. Just precook your beef/veggies and then dump the whole thing into the Crockpot.

Ingredients
  • For the Beef and Guinness Stew
  • 1 ½ Pounds Beef Stew Meat, Cut Into Bite Size Pieces
  • 2 Tablespoons Flour
  • 2 Sweet Onions, Sliced
  • 1 Bottle Guinness Draught
  • ¾ Teaspoon Herbs de Provence
  • ¼ Teaspoon Onion Powder
  • ¼ Teaspoon Garlic Powder
  • 3 Cloves Garlic, Minced
  • 2 Large Potatoes, Peeled and Diced
  • ½ Head Cabbage, Shredded
  • 4 Cups Low Sodium Beef Stock
  • 1 Tablespoon Parsley, Roughly Chopped
  • For the Garlic Bread Crouton
  • French Baguette, Sliced
  • 2 Tablespoons Butter, Melted
  • 1 Garlic Clove
  • ½ Cup Shredded Mozzarella Cheese
Instructions
  1. In a large bowl, combine beef with flour. Season generously with salt and black pepper. Toss until well coated.
  2. In a large stock pot heat a few tablespoons of canola oil over medium high heat. Cook beef a few minutes on each side until browned.
  3. Set aside,
  4. In the same pot, add another tablespoon of oil. Cook onions for 10-15 minutes or until golden brown.
  5. Pour in Guinness. Reduce for 5-7 minutes or until slightly thickened.
  6. Add in onion/garlic powder, herbs de Provence, and garlic. Stir until incorporated.
  7. Add in beef, potatoes, and cabbage. Stir until just combined.
  8. Pour in beef stock.
  9. Simmer with a lid slightly askew for around 1½ hours.
  10. You could also pour everything into the crockpot for 3-4 hours on high or 7-8 hours on low.
  11. For The Garlic Crouton
  12. Preheat oven to 400 degrees F.
  13. Brush baguette with butter and season with salt. Bake for 8-10 minutes or until crusty.
  14. Rub with garlic clove and sprinkle with cheese. Broil for 2-3 minutes or until melted.
  15. Putting It All Together
  16. Top stew with garlic toast crouton and fresh parsley if desired.

  1. When buying beef stew meat look for marbling (ie. fat). This will melt as it cooks making your beef super tender.

The recipe that I wanted to try right first was this Buffalo Chicken Soup recipe. It is total comfort food! Warm, creamy, and ready in less than 30 minutes.

 

It takes all my favorite buffalo flavors, and puts them into a bowl of slurpable goodness!

  • 3 Tablespoons Butter
  • 1 Large Carrot, Diced
  • ½ Sweet Onion, Diced
  • 2 Cloves Garlic, Minced

  • Salt and Pepper, To Taste
  • ⅓ Cup All Purpose Flour
  • 32 Ounces Low Sodium Chicken Stock
  • ½ Cup Whole Milk
  • 2 Tablespoons Buffalo Sauce, or To Taste
  • 1½ Cups Ounces Mozzarella Cheese, Shredded
  • ½ Cup Bleu Cheese Crumbles
  • ¼ Cup Parmesan Cheese, Grated
  • 2 Cups Rotisserie Chicken
Instructions
  1. In a large stock pot, melt butter over medium heat. Add in carrot, onion, and celery. Saute for 5-6 minutes or until tender.
  2. Stir in garlic and cook for 1 more minute. Season with salt and pepper to taste.
  3. Whisk in flour and cook for 1-2 minutes stirring constantly until thickened.
  4. Pour in chicken broth and milk. Bring to a simmer. Cook for 5-7 minutes.
  5. Stir in buffalo sauce and cheeses until melted.
  6. Stir in chicken and cook for 5 more minutes or until heated through.
  7. Serve with additional buffalo sauce and bleu cheese crumbles if desired.

Ingredients
  • 2 Pounds Ground Turkey
  • 2 Links of Turkey Kielbasa, Sliced into Rounds
  • (2) 28 Ounce Cans Diced Tomatoes
  • (1) 16 Ounce Can Dark Red Kidney Beans, Drained and Rinsed
  • (1) 15 Ounce Can Black Beans, Drained and Rinsed
  • (1) 15 Ounce Can Chili Beans
  • 2 Sweet Onions, Diced
  • 3 Stalks of Celery, Diced
  • ½ Green Bell Pepper, Diced
  • 3 Tablespoons of Chili Powder
  • 2 Teaspoons Cumin
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Salt
  • ½ Teaspoon Oregano
  • 1 Teaspoon White Sugar
  • 2 Teaspoons Garlic Powder
  • 2 Cups Water
Instructions
  1. In a large skillet, cook onions for 7-8 minutes or until translucent. Then in the same pan, brown the ground turkey.
  2. In a large slow cooker sprayed with non stick cooking spray, add all ingredients. Stir well.
  3. Cook on high for 3-4 hours or on low for 6-7 hours.
  4. Note: If you don't have a slow cooker, you could also cook this for 2-3 hours in a large stock pot on the stove.

Cheesy Potato Soup Recipe aka Queso Soup: Creamy, cheesy potato soup with a spicy kick. Ever wanted to eat Queso with a spoon, now you can!
Ingredients
  • ¼ Cup Butter
  • 2 Red Bell Peppers, Diced
  • 1 Sweet Onion, Diced
  • 3 Poblano Peppers, Seeds Removed, Finely Diced
  • 2 Garlic Cloves, Minced
  • Half of a 20 ounce Bag of Frozen Southwestern Style Hash brown Potatoes
  • 1 Teaspoon Cumin
  • 4 Cups Low Sodium Chicken Broth
  • ⅓ Cup All Purpose Flour
  • 1½ Cups Whole Milk
  • 1 Cup Half and Half
  • 2 Cups Sharp Cheddar Cheese
  • Salt, To Taste
  • To Garnish Chopped Red Bell Pepper, Red Onion, and Blue Tortilla Chips
Instructions
  1. In a large stock pot, heat butter over medium heat. Add in bell pepper, onion, and poblano peppers. Cook for 5-7 minutes or until the onions are translucent and the peppers are beginning to soften.
  2. Add garlic and cumin ,and cook for another 1-2 minutes.
  3. Stir in potatoes and cook for 5-7 more minutes or until potatoes are tender.
  4. Pour in chicken broth. Bring to boil, reduce to simmer. Cover and summer for 25-30 minutes stirring frequently.
  5. In a medium bowl, combine flour, milk, and half and half. Turn up heat on soup to medium and stir in milk mixture. Cook for 5 minutes, stirring constantly until thickened.
  6. Stir in cheese and cook until melted, stirring constantly.
  7. Add all the shredded cheese and cook on low, stirring constantly until cheese is melted.
  8. Garnish with additional bell pepper, onion, or tortilla chips if desired.

This type of weather makes me crave warm, comforting food. Personally I can’t think of anything more warming than soup or comforting than lasagna.


Why not put them together into one delicious meal? Bam Lasagna Soup was born!

Lasagna Soup Recipe: With Ground beef, tomatoes,and ricotta cheese.
Ingredients
  • 2 Tbsp extra virgin olive oil, divided
  • 1 lb lean ground beef
  • 1 large yellow sweet onion, diced
  • 3 - 5 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 (14.5 oz) can crushed tomatoes
  • 2½ Tbsp tomato paste
  • 2-3 tsp Italian Seasoning Medley
  • 1 tsp granulated sugar
  • Salt and freshly ground black pepper, to taste
  • 10 lasagna noodles, broken into bite size pieces
  • 1¼ cups shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 8 oz ricotta cheese
Instructions
  1. Heat 1 tablespoon olive in in a large dutch oven over medium heat. When hot, crumble ground beef into pan. Season with salt and pepper. Cook until browned and no pink remains.
  2. Drain most of the fat from the beef. Leave a small portion of the fat and leftover meat bits in the pan. Add and heat 1 tablespoon olive oil. Saute onion until soft(around 5 minutes). Add garlic and saute for one more minute.
  3. Add chicken broth, diced tomatoes, crushed tomatoes, tomato paste, sugar, and Italian seasoning. Add cooked beef. Season with salt and pepper to taste. Bring to a boil. Simmer on medium heat for around 20 minutes.
  4. Cook lasagna noodles according to package directions. Reserve 1 cup of pasta water before draining. Add cooked pasta and 1 cup pasta water after the 20 minutes have passed.
  5. Mix ricotta, mozzarella, and Parmesan cheeses in a small bowl. Dollop on top of soup. Serve with a crusty bread like Ciabatta if desired.

Variations:
Use ground turkey instead of ground beef to trim the calories.

Substitute Italian sausage for the ground meat.
Use vegetarian protein crumbles and vegetable stock to make the dish vegetarian.
