I love this decadent slow cooker sweet potato casserole. It basically cooks itself while you worry about your turkey, and other fixings!

The sweet potatoes are boiled, and the casserole is made right in your crockpot! However, if  you want it NOW (and I don’t blameyou),you can also make it in the oven. (See directions below.)

I like to pop my crockpot sweet potato casserole under the broiler to toast the marshmallows at the end, but you certainly don’t have to. You could just add the marshmallows into the crockpot instead. They’re still get ooey gooey, just not browned.

Ingredients
  • 5 Pounds Sweet Potatoes,Peeled and Diced
  • 1 Cup Water
  • 2 Eggs
  • 2 Teaspoons Vanilla
  • ½ Cup Butter, Melted
  • 1 Cup Brown Sugar, Packed
  • 2-3 Teaspoons Salt (To Taste)
  • ½ Cup Heavy Cream
  • For the Topping
  • ½ Cup Brown Sugar
  • ⅓ Cup Flour
  • ⅓ Cup Butter, Melted
  • 1 Cup Pecans, Chopped
  • 4 Cups Mini Marshmallows
Instructions
  1. Slow Cooker Sweet Potato Casserole
  2. Place water and sweet potatoes into slow cooker. Cook on high for 4-4½ hours. Drain.
  3. Return to slow cooker, and mash. Stir in eggs, vanilla, butter, brown sugar, salt, and heavy cream.
  4. In a small small bowl combine brown sugar, flour, butter, and pecans. Sprinkle evenly over sweet potatoes.
  5. Cook on high for 2-3 hours.
  6. Top with marshmallows. If desired, pour into a greased 9x13 pan and broil for 2-3 minutes or until golden brown.
  7. Oven Version
  8. In a large sauce pan bring sweet potatoes to a boil. Cool for 12-14 minutes or until tender. Drain.
  9. Preheat oven to 375 degrees F.
  10. Mash potatoes, and stir in eggs, vanilla, butter, brown sugar, salt, and heavy cream.
  11. Evenly spread into a greased 9x13 inch pan.
  12. In a small bowl, stir brown sugar, flour, butter, and pecans together. Evenly sprinkle over potatoes. Bake for 15-20 minutes.
  13. Top with marshmallows, and broil for 2-3 minutes or until golden brown.

Slow Cooker Sweet Potato Casserole Tips

  1. Even with a sharp knife sweet potatoes can be hard to cut. Try microwaving for 2-3 minutes before dicing.
  2. Use a slow cooker liner (found in the foil/saran wrap aisle) to make clean up a breeze!

Let me preface this post by saying I am NOT one of those high falootin make your own everything bloggers. I am not opposed to cake mixes, canned soup, or even premade pie crust.

However, there are some things that just taste better when homemade. This Green Bean casserole from scratch is one of those things. This casserole tastes good with cream soup and canned onions. But this side dish is downright incredible when made 100% from scratch!

Give it a try for your Thanksgiving this year. Best of all this green bean casserole from scratch can be made ahead! Just follow steps 5-11 to prep the green beans and mushroom sauce. Then make/top with the onions right before serving! Effortless, holiday comfort food!

Ingredients
  • For the Homemade French Fried Onions
  • 2 Sweet Onions, Diced
  • ⅓ Cups All Purpose Flour
  • 2 Tablespoons Panko Bread Crumbs
  • Salt and Pepper, To Taste
  • Oil For Frying, (I used Canola)
  • For the Homemade Mushroom Sauce
  • 3 Tablespoons Butter
  • 12 Ounces Mushrooms, Thinly Sliced
  • Salt and Pepper, To Taste
  • 2 Cloves Garlic, Minced
  • 3 Tablespoons All Purpose Flour
  • ½ Cup Chicken Broth
  • ½ Cup Heavy Cream
  • 3-4 Cups Fresh Green Beans, Trimmed and Halved
Instructions
  1. For the Homemade French Fried Onions
  2. In a medium bowl, toss onion, flour, breadcrumbs, and salt and pepper.
  3. In a large skillet, heat ~1/2 inch of oil. Add onions a little at a time. Fry until golden brown.
  4. Drain on paper towels. Set aside.
  5. For the Green Beans
  6. In a large stock pot,boil green beans in salted water for ~5 minutes. Drain and put into an ice bath. Set aside.
  7. For the Homemade Mushroom Cream Sauce
  8. In a large skillet, melt butter over medium high heat. Add in mushrooms, salt, and pepper. Cook for 3-5 minutes.
  9. Stir in garlic, and cook for ~1 more minute. Stir in flour.
  10. Stir in broth a little at a time, stirring constantly. Simmer for 1 minutes. Add cream.
  11. Cook for 5-7 more minutes or until thickened.
  12. For the Green Bean Casserole From Scratch: Putting It All Together
  13. Stir cooked green beans into the sauce until well coated. Top with french fried onions.
  14. Bake for 15-20 minutes or until bubbling.

My personal favorite Thanksgiving side dish is mashed potatoes! So smooth and creamy. Pure decadence! I’m known to go back for second (okay fine third) helpings! I may also be the one licking the pan clean in the kitchen while “doing the dishes”, but let’s not mention that.  😉

 

These mashed potatoes are some of the best I’ve ever tried. The potatoes are so creamy thanks to both sour cream and heavy cream. It’s the holidays after all so they’re topped off with bacon, cheese, and crispy crunchy panko.

Best of all these can be made ahead of time. Just prepare the recipe up to step #6. Stick in the fridge for a few hours (or days) until ready to bake/eat!

Cheesy Mashed Potato Casserole with Bacon
Ingredients
  • 5 Pounds Potatoes (~10 Medium Potatoes), Cubed
  • 1 Stick Butter, Softened and Cubed
  • 1 Cup Sour Cream
  • 1 Cup Heavy Cream
  • 6 Slices Bacon
  • 1½ Cups Panko Bread Crumbs
  • ¼ Cup Scallions, Thinly Sliced
  • 1 Cup Cheddar Cheese, Shredded
Instructions
  1. Preheat oven to 350°F. Wash, peel and cube potatoes. Rinse with cold water.
  2. In a large sauce pan, cover potatoes with water and add salt to taste.
  3. Bring to boil, and cook for 10-15 minutes or until fork tender. Drain.
  4. Spread potatoes evenly onto 2 rimmed baking sheets. Bake for 5-7 minutes or until the moisture has evaporated.
  5. Mash potatoes (I used a regular old potato masher), butter, and sour cream. Fold in heavy cream. Season with salt and pepper to taste.
  6. Evenly spread potatoes into a 9x13 inch baking dish.
  7. Preheat oven to 350 degrees F.
  8. In a skillet, cook bacon until crisp.
  9. In a large mixing bowl combine bacon (its rendered fat), panko, cheese, and scallions. Season with salt and pepper to taste.
  10. Spread over the top of the mashed potato mixture.
  11. Bake for 40-45 minutes or until heated through.

Every summer there are 234242 things I want to do with fresh sweet corn. However, I never really end up doing much of anything with it because it tastes so darn good just off the cob.

I love corn on the cob so much that I cried when I lost my front teeth and couldn’t enjoy it. It’s just not the same cut off the cob am I right?


The summer I lost my front teeth, I forbade my family from eating corn on the cob!! However, I vowed this summer was not going to end without me trying out a new corn recipe.

The spicy rub combined with the sweet corn is a wonderful contrast.

If you’re reading this recipe out of season feel free to substitute frozen corn.

Parmesan Chipotle Corn

Ingredients
  • 12 Ears of Sweet Corn, Shucked
  • 1 Tablespoon Kosher Salt
  • 3 Tablespoons Parmesan Cheese, Grated
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Chipotle Chili Powder
  • 1 Teaspoon Minced Onion
  • ½ Teaspoon Parsley Flakes
  • Butter, Softened
Instructions
  1. Bring a pot of salted water to a rolling boil. Cook corn for 4-6 minutes or until nothing squirts out when poked with a fork.
  2. Mix all ingredients except butter together in a small bowl until combined. Pour into a shaker (an old Parmesan cheese container works well).
  3. When corn is done, brush generously with butter. Sprinkle with the desired amount of seasoning.

Ingredients
  • 1 lb Broccoli,Chopped
  • 2 Tablespoons White Sugar
  • ½ Cup Mayonnaise
  • ⅓ Cup Hot Water
  • 1 Cup Cheddar Cheese, Shredded
  • ½ Red Onion Diced
  • 12 Slices Bacon, Cooked Crisply
  • 2 Tablespoons Apple Cider Vinegar
  • ¼ Cup Sunflower Kernels
Instructions
  1. In a medium bowl mix sugar and hot water until sugar is completely dissolved.
  2. Pour the water/sugar mixture over the broccoli.
  3. Cool slightly. Stir in mayonnaise and vinegar.
  4. Fold in cheese, onion, and bacon. Top with sunflower kernels.
  5. Chill for 2-3 hours before serving.

Baked beans are something we have at every summer picnic in my family. From Memorial Day, to Labor Day we serve baked beans at every family gathering.

Our “secret” family recipe usually simmers in the oven for 2 or 3 hours. I’ve found a long cooking time allows all the delicious flavors to come together.


During the summer, having the oven on for 2-3 hours is not at the top of my “List of things I enjoy”. So I decided to try a new version:  Crockpot Baked Beans.

The Crockpot Baked Beans worked out perfectly and was full of flavor. Best of all it cooks low and slow while you relax in your A.C.! Second best: It has bacon! 🙂

Crockpot Baked Beans

Ingredients
  • 1 lb Lean Ground Beef
  • 1 lb Bacon
  • 1 Sweet Onion, Diced (Grab a Vidalia if you can!)
  • 1 Bell Pepper, Diced (Any color)
  • 4 Medium Cans Pork and Beans (or any canned beans you like)
  • ¾ cup Brown Sugar (packed)
  • 1 tbsp Minced Garlic
  • 2 tbsp Mustard (I used spicy brown)
  • 2 tbsp Worcestershire Sauce
  • ¾ cup Ketchup
  • 1 cup Barbecue Sauce (I like Sweet Baby Rays)
Instructions
  1. Saute onion and pepper until tender.
  2. Brown ground beef. Drain off excess grease. Then combine with onion/peppers.
  3. Add beef and vegetables into your crockpot. Add all the remaining ingredients (except for the bacon). Stir well.
  4. Fry bacon until crispy. Roughly chop and add to the top of the crock pot.
  5. Cook on low for 3-4 hours.
